Chocolate Peanut Butter Cookie Bars

Chocolate Peanut Butter Cookie Bars are dense, chewy and are loaded with peanut butter and are topped with drizzled chocolate and crushed peanuts for the perfect treat!

My mother-in-law has been making me these chocolate peanut butter cookie bars for years and they are my favorite. They are soft and chewy on the inside with a slightly chewy crust, just like the perfect cookie. Since we are almost knee deep in the holiday season, I decided to make these a little fancier by topping them with drizzled melted chocolate and chopped peanuts.

Someone please come take these from my house because they are a problem and I cannot stop eating them! For me, a dessert has to have the right texture which is why I never liked birthday cake. Too spongy for my liking! These dense and chewy cookie bars have the best texture and make awesome holiday gifts for people.

You can serve these cookie bars for Thanksgiving or for Christmas and everyone is sure to love them. Troy's stepmom Wendy who is the original creator of these bars often dips them half in chocolate so if you love more chocolate than a drizzle, try it that way.

These are not healthier bars that you would expect from The Nutritionist Reviews but more like a holiday or birthday celebration bar. The one healthier change that I did make was to use white whole-wheat flour instead of white flour like I do in all of my cooking and baking. I also reduced the sugar a bit and added more peanut butter and less butter.

Obviously my kids love them too. Who wouldn't? If you don't like peanut butter or have an allergy, try almond butter or sunflower seed butter for these. November is National Peanut Butter Lovers Month and I mean, why wouldn't I take the excuse to celebrate?!? My kids and I love peanut butter, especially Oliver and I. We eat it in and on everything and adding it to our dessert was a fantastic plan!

I cooked these bars in the Chicago Metallic small baking sheet which is made of textured aluminum. The bars didn't stick at all and got the perfect texture. I served the bars to my family on the Mikasa Monterey plates which if you've been following my blog for awhile, you may recognize this patter from a bunch of my photos. I have the platter too and it is one of my favorite serving pieces.

Yield: 20 cookie bars

Chocolate Peanut Butter Cookie Bars

Chocolate Peanut Butter Cookie Bars are dense, chewy and are loaded with peanut butter and are topped with drizzled chocolate and crushed peanuts for the perfect treat!

prep time: 10 MINScook time: 20-25 MINStotal time: 30-35 minutes

INGREDIENTS

INSTRUCTIONS

  1. Preheat oven to 350 degrees.
  2. Melt butter and peanut butter together in microwave in a large bowl. Add in the rest of the ingredients and stir well.
  3. Spread mixture into a 9 x 13 pan that is sprayed with nonstick spray until it is about 1/2-3/4 inch thick.
  4. Bake for 20-24 minutes until lightly browned and edges pull away from pan. 
  5. Melt dark chocolate in microwave and drizzle on bars. Top with crushed peanuts. 
  6. Cool bars and then cut into squares.
