For Christmas this year, my mother-in-law gave me a Mason jar full of the most amazing dark chocolate truffles. I tried one later that day and instantly fell in love. They were super rich, creamy and full of dark chocolate flavor. I loved the chewy texture and everything about them. That jar of truffles disappeared so quickly. I have no idea what happened to them ; ). You know that I love to try to find a way to make every indulgent treat a little bit healthier so I started experimenting in the kitchen and am thrilled with the results.

Let me introduce to you a healthier dark chocolate avocado truffle that tastes just like the original and is full of healthy fats from the avocado and skips the heavy cream. They are just as addictive as the original and seem to be playing the same disappearing act that the others were playing. My favorite part about these truffles: they are just four ingredients. It doesn't get simpler than that! Just avocado, dark chocolate or chocolate chips, vanilla extract and Madre Labs CocoCardio- a blend of organic cocoa, beet juice powder and hibiscus extract. Make sure that you read the notes section of this recipe to make sure that the truffles turn out the best possible.

CocoCardio is a dark cocoa beverage that can also be added to recipes such as this one. Cocoa is rich in antioxidants called flavanoids that may help support heart health. It has no added colors, sugar, artificial sweeteners, dairy, gluten or soy. One scoop has only 1 gram of sugar, 2 grams of protein and is 25 calories. It is a great addition to these truffles! The beet roots contain betalains which are richly colored pigments with antioxidant properties along with phytonutrients. Hibiscus has anthocyanins and other phytonutrients. What a nutrient packed cocoa powder!

Madre Labs also makes two other beverages: CafeCeps which is an organic instant coffee with cordyceps and reishi mushrooms. Healthier Chocolate Avocado Truffles

Healthier Chocolate Avocado Truffles contain just 4-ingredients and make the perfect snack or dessert. You won't even notice that these rich and creamy truffles are healthier! 
prep time: 20 MINS Refrigerator time: 1 hour total time: 1 hour, 20 mins

INGREDIENTS

  • 1 avocado
  • 3 ounces dark chocolate
  • 1/2 teaspoon vanilla extract
  • 3 tablespoons Madre Labs CocoCardio , divided

INSTRUCTIONS

  1. Cut avocado in half, remove pit, scoop out flesh and mash well in a bowl with a fork until smooth.
  2. Melt the chocolate in the microwave until just melted. 
  3. Mix together the melted chocolate, vanilla, 1 1/2 tablespoons CocoCardio powder and avocado until well blended. 
  4. Refrigerate for 1 hour or overnight.
  5. Scoop out about a tablespoon of the truffle mixture and roll into a ball. Continue until the rest of the mix is used up.
  6. Roll the balls in the remaining CocoCardio powder until covered.
Notes:
*You can double or triple this batch as it lasts for several days in the fridge.
**Make sure to mash avocado very well so there are no green chunks in your truffles.
***You can use dark chocolate chips and/or chopped dark chocolate bars.
****These truffles are not very sweet. They have the bitter flavor of dark chocolate. If you prefer a sweeter flavor, use milk chocolate or add sweetener.
