One of my family's favorite meals is crispy tofu stir-fry. All 5 family members love it and I've made it about 20 times so I think it's time to share the recipe! We aren't vegetarian or anything but love eating tofu regularly. Serve this veggie loaded stir-fry with some brown rice and you'll have a whole meal ready in less than 30 minutes.

What veggies to use for Crispy Tofu Stir-Fry

Literally any veggies can work! For this recipe, I used yellow and red bell peppers, green onion, peapods and carrots. Other veggies that would be great are celery, broccoli, zucchini, summer squash, bamboo shoots, water chestnuts, etc. Use what you have on hand! Even a bag of frozen veggies will work well.

What kind of tofu to use for a crispy tofu stir-fry

I like using extra firm tofu for any stir-fry that I make. It has the best texture and crisps up really nicely.

Even thought I've been making stir-fries for a really long time, I just learned a trick to making a thicker sauce like you get to enjoy in Asian restaurants. You whisk water with cornstarch and let it sit in the sauce for a bit to thicken. Then, when you add it to the tofu and veggies, the sauce is very thick and has the best texture. I'm so excited to have learned this simple game changing tip.

We serve our tofu stir-fry with brown rice. For a little extra protein, we often top ours with crushed peanuts. Whatever way you serve it, it's going to taste great. You can also serve it over cauliflower rice to make it lower carb if you like.

I made a sauce using sesame oil, low-sodium soy sauce, ginger, garlic and vinegar. It is super flavorful and I know that you will love it!

Crispy Tofu Stir-Fry

Crispy Tofu Stir-Fry is loaded with crispy flavorful tofu, bell peppers, carrots, peapods and a delicious soy garlic ginger sauce!
Prep Time:  10 minutes Cook time: 15-20 minutes Total time: 25-30 mins

INGREDIENTS

  • 3 tablespoons low-sodium soy sauce
  • 1 1/2 tablespoons rice vinegar (or apple cider vinegar)
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon corn starch
  • 2 tablespoons water
  • 2 tablespoons olive oil, divided
  • 1 package extra-firm tofu, cut into 1/2 inch squares
  • 2 large carrots, julienned in thin strips
  • 1 yellow bell pepper, cut into thin strips
  • 1 red bell pepper, cut into thin strips
  • 1 1/2 cups snow peas
  • 4 green onions, chopped
  • 3 cloves garlic, minced
  • 2 teaspoons ginger, minced
  • Optional: 2 tablespoons sesame seeds

INSTRUCTIONS

  1. Whisk corn starch and water together until there are no lumps. Then, whisk in the soy sauce, vinegar and sesame oil. Set aside.
  2.  In a pan, heat 1 tablespoon of olive oil. Cook tofu for about 5-6 minutes on each side until crispy and golden brown. Remove tofu from pan and set aside.
  3. Heat the the other tablespoon of olive oil and sauté carrots for 2 minutes over medium high heat, add in bell peppers and pea pods and cook for another 2 minutes stirring regularly. Add in green onions, garlic and ginger and cook for another 2 minutes.
  4. Add in cooked tofu and sauce and mix everything together for about a minute. Stir in sesame seeds if desired. Serve over brown rice.
