These Tangy BBQ Chicken Wraps with Lemon Apple Coleslaw are a lifelong family favorite! My mom would make it growing up and my siblings and I go crazy for it! She would make it every summer but usually with pork- pork loin works just as well. I made my own spin on it and added thinly sliced apples which gave extra crunch and sweetness.


BBQ Chicken Wraps with Coleslaw
Just throw the chicken in the slow cooker with this homemade BBQ sauce and let the chicken cook until it shreds easily. Then, make this flavorful lemon apple coleslaw. Throw it all together on a whole-grain wrap. It is really easy and requires very little hands-on time.

If you like, you can double the BBQ sauce recipe so you have some to put on top of your wraps after they cook. The combination of the tangy coleslaw from the lemon juice with the delicious BBQ chicken and crispy apples is our favorite. You can serve this in pitas, wraps or tortillas. I like looking for a whole-grain variety for extra fiber.

The apples that I used for this recipe are the delicious new EverCrisp Michigan apples. which are a cross between a Honeycrisp and a Fuji apple. They are super crisp, juicy and sweet! You could use any variety of Michigan apples you like though.

Prep Time:  10 minutes minutes Cook time: 4 hours Total time: 4 hours, 10 minutes

INGREDIENTS

INSTRUCTIONS

  1. In a slow cooker, mix together all of the ingredients for the tangy BBQ chicken and cook on high for about 4 hours until chicken easily falls apart with a fork. Shred chicken with a fork until it is fully shredded.
  2. When the chicken is almost done, mix together all of the ingredients for the lemon coleslaw in a large bowl.
  3. Lay out the wraps and fill with shredded BBQ chicken and lemon coleslaw.
**BBQ chicken stores well in the fridge for about 5 days. Coleslaw is best enjoyed the day it is made.
