Berry Chicken Salad

When I visit a restaurant, one of my go-to orders is any salad I see with fruit, some kind of cheese and chicken (or a burger!). I wanted to create an ultimate loaded salad since we haven't been going to restaurants much at all in the last year and a half. This Berry Chicken Salad with Raspberry Vinaigrette is so delicious and has a homemade vinaigrette making the salad darn delicious!

Berry Grilled Chicken Salad

Berry Chicken Salad Nutrition

We all want to stay as healthy as possible all year round and I wanted to make a salad full of nutrients to help keep us feeling our best. Raspberries and blackberries are loaded with fiber- some of the highest fiber fruits with 8 grams per cup and vitamin C which is an antioxidant. Spinach is rich in vitamins A and C, folic acid, iron and vitamin K.

Raspberry Chicken Salad

The chicken provides protein as well as vitamins like selenium and phosphorus. This salad is packed with antioxidants to help support you feeling your best which is especially important for us as Troy and the kids are back in school. To help support everyone's immune systems, we love the elderberry products from Terry Naturally®. The ViraPro® is an elderberry immune blend with elderberry, vitamins A, C and D, zinc and selenium which Troy and I take*. What is special about the Terry Naturally® ViraPro is that they run several tests on it to make sure that it is not adulterated. Many products claim to be elderberry but do not have 100% elderberry in it like these do.

The kids take the Terry Naturally® ViraPro Kids which comes in chewable tablets and has no artificial colors or flavors. It has vitamin A, D3, C and E, selenium and zinc. The kids enjoy the taste of the tablets and I love knowing that we are supporting our immune systems.*

Homemade Raspberry Vinaigrette

Homemade Raspberry Vinaigrette

Whenever I make a homemade salad dressing with fruit in it, I always wonder why I don't make it more often. It is SO good! I just blended together fresh raspberries, olive oil, red wine vinegar, honey, black pepper and salt for a flavorful dressing with no junky ingredients like store bought varieties often have. It tastes delicious on this salad.

Feel free to use whatever berries you have on hand for this salad. Cherries or strawberries would be especially awesome. Also, instead of the feta cheese, you can use blue cheese and nuts would be an awesome addition as well- I love walnuts and pecans on salads.
