When I visit a restaurant, one of my go-to orders is any salad I see with fruit, some kind of cheese and chicken (or a burger!). I wanted to create an ultimate loaded salad since we haven't been going to restaurants much at all in the last year and a half. This Berry Chicken Salad with Raspberry Vinaigrette is so delicious and has a homemade vinaigrette making the salad darn delicious!

Berry Chicken Salad Nutrition

Homemade Raspberry Vinaigrette
Whenever I make a homemade salad dressing with fruit in it, I always wonder why I don't make it more often. It is SO good! I just blended together fresh raspberries, olive oil, red wine vinegar, honey, black pepper and salt for a flavorful dressing with no junky ingredients like store bought varieties often have. It tastes delicious on this salad.
Feel free to use whatever berries you have on hand for this salad. Cherries or strawberries would be especially awesome. Also, instead of the feta cheese, you can use blue cheese and nuts would be an awesome addition as well- I love walnuts and pecans on salads.

Berry Chicken Salad with Raspberry Vinaigrette
INGREDIENTS
- 1 1/2 pounds boneless, skinless chicken
- 1 teaspoon onion powder
- 1 teaspoon black pepper
- 8 cups baby spinach
- 1 cup raspberries
- 1 cup blackberries
- 1/2 cup thinly sliced red onion
- 1/2 cup feta cheese
- 1/2 large cucumber, sliced
- Raspberry Vinaigrette
- 1/2 cup raspberries
- 1/3 cup olive oil
- 1/4 cup red wine vinegar
- 2-3 tablespoons honey
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
INSTRUCTIONS
- Sprinkle chicken breasts with onion powder and black pepper. Grill chicken until chicken is cooked through about 5-7 minutes on each side on medium-high heat.
- Once chicken is cooked through, remove it from the grill and slice it thinly.
- Toss together spinach, chicken, berries, onions and cucumber.
- In a blender, blend together the raspberries, olive oil, vinegar, honey, pepper and salt until dressing is smooth.
- When you're ready to serve, top salad with dressing.
