Strawberry Kiwi Spinach Salad with Poppy Seed Dressing

Strawberry Kiwi Spinach Salad
Sometimes, it can be hard to get in the mood for a salad but man, when I find a good salad recipe, I can't stop making it. I have always been a fan of strawberry spinach salads but until now, never made my own poppy seed dressing. It is actually quite easy and so delicious. In celebration of Australia Day on January 26, I created this recipe using kiwi which is popular in Australia. This strawberry kiwi spinach salad can be topped with your choice of protein or eaten as a side dish like it is here. I paired this fresh salad with an Australian-inspired Boomerang’s Pie for a balanced, easy weeknight meal.

Strawberry Spinach Salad with Poppy Seed Dressing
Growing up, my mom would have a night each week called Ethnic Night where my siblings and I would each choose a different country on the map and my mom would make a meal from that country and have a little lesson about the history of that country or something else fun about it. We absolutely loved it and it was a great way to try different kinds of foods. When I heard that Australia Day was coming up, I knew that it would be a fun opportunity for my family to have an Australian-inspired meal to celebrate and to learn a little more about the country.

Salad and Australian Meat Pie
I did a bunch of research of foods that Australians eat and it looks like they have tons of fresh produce available. A few things that I saw a lot of in terms of produce was sweet potatoes and kiwi. I got inspired to make a strawberry kiwi spinach salad and to make my own homemade poppy seed dressing. Maybe it is not 100% authentic but it is Australian-inspired for sure! I could not find any truly authentic Australian salad recipes so I decided to create my own.

Side dish salad
One food that I saw time and time again that is super popular in Australia is their meat pies. Every list that I read had meat pies on them as a must-try food in Australia. They are not your typical fruit pie and are instead filled with different meats, vegetables, gravy, sauces and more. Put down your fork and knife and enjoy it handheld like a traditional Aussie meat pie. You can find them at all different shops, bakeries and supermarkets in Australia.

Boomerang's Pies
I decided to pair my Australian-inspired Strawberry Kiwi Spinach Salad with Poppy seed Dressing with Boomerang's Pies. They are Australian-inspired meat pies (and veggie pies) that take a twist on the Australian classic meat pie. They are savory and filled with natural ingredients in a flaky pastry. They are found easily in the frozen food aisle, are affordable and come in many different varieties. You can either bake them in the oven or microwave them if you're short on time. They paired perfectly with this strawberry kiwi salad for a complete, balanced Australian-inspired meal.

Variety of Boomerang's Pies
My husband likes the pepperoni version for a late-night snack. Some other great flavors are classic chicken, spinach and mushroom, sausage egg and cheese for breakfast, steak and potato, chicken and mushroom and more. They can be enjoyed for breakfast, lunch or dinner (or apparently snack!). I thought that the chicken and mushroom and steak and potato Boomerang's Pies would be perfect to go with this meal in honor of Australia Day!

INGREDIENTS

  • 6 cups baby spinach
  • 2 cups strawberries, sliced
  • 2 kiwi, peeled and sliced
  • 1/4 cup red onion, sliced
  • 1/2 cup candied nuts, chopped
  • Poppy Seed Dressing
  • 1/3 cup olive or canola oil
  • 1/3 cup apple cider vinegar
  • 2 tablespoons honey
  • 1 tablespoon poppy seeds

INSTRUCTIONS

  1. Whisk together ingredients for poppy seed dressing.
  2. Toss together all ingredients for salad and toss with dressing.
