My favorite Mediterranean restaurant right near my house has the best chopped salad ever. We order it every time we go there and quickly recreated it at home. Luckily, my version is just as delicious as the original. The restaurant version does not have roasted chickpeas on it but I started to make it with them at home and can't stop making it this way. They are so good!

The chopped Greek salad features chopped cucumber, tomato, green onion, parsley, feta cheese, roasted chickpeas and a fresh lemon vinaigrette. It is super quick to make (aside from the chickpeas) and is perfect to pack with your lunch for a boost of fiber, vitamins and minerals along with some protein from the beans. I have also made it without feta cheese or with green pepper. All versions are delicious!

Troy, Adalyn and I cannot stop eating this salad when I make it. Whether I make a huge portion or a smaller one, it all seems to disappear in about 5 minutes. Adalyn is new to crunchy chickpeas and instantly fell in love which is why I keep making them. I will just roast up a big pan at a time (using 2 cans of garbanzo beans) and flavor them with garlic or make them salt and vinegar flavored. Adalyn begs me for "crunchy sour beans" as she calls them all the time! Haha.

Greek Chopped Salad with Roasted Chickpeas

Prep Time: 5 minutes
Cook Time: 20 minutes
Servings: 4

Ingredients

  • 1 large English cucumber, diced
  • 2 large tomatoes, diced
  • 3 green onions, diced
  • 1/4 cup fresh parsley, chopped
  • Juice from 1 lemon
  • 3 tablespoons olive oil
  • 1/2 teaspoon black pepper/
  • 1/4 teaspoon salt
  • 1/4 cup feta cheese
Roasted chickpeas
  • 1 can low-sodium chickpeas
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder

Instructions

1. Preheat oven to 400 degrees. Drain, rinse and dry chickpeas. Toss in olive oil on a baking sheet and sprinkle with garlic powder. Roast for 20 minutes or until chickpeas are crunchy.
2. Mix all salad ingredients and dressing together. Top with roasted chickpeas.
Enjoy!
