Growing up, I loved coffee cake. My Busia (Grandma in Polish) would bring it over often when she would come visit us. It was from a store with drizzled on icing and we all loved it. I'm always attempting to make recipes healthier and knew it was time to try to make my own healthier coffee cake at home. It turned out so amazing and I am excited to share this whole wheat cinnamon streusel coffee cake with you today.

You know those afternoons when you need a little treat? Or weekend brunch mornings when you need something sweet and delicious but a little bit healthier? This whole wheat coffee cake satisfies both of those needs. I used less sugar than you normally would for coffee cake, used white whole-wheat flour for more fiber and nutrients. You won't be able to taste that this coffee cake is any healthier because it tastes just so delicious! That cinnamon streusel topping is a can't-miss component.

My favorite thing to do is enjoy a piece (or let's be honest, two) with my husband and kiddos on Saturday morning with a cup of hot Bigelow Constant Comment tea. It is perfectly cozy and warming and makes me so happy. This tea is full of flavor, antioxidants and is a great no-sugar beverage to pair with the coffee cake. Feel free to make a double batch of this coffee cake and freeze it for another time. Double the coffee cake with half of the effort! That's my kind of snack.

Also, did you know that it is National Hot Tea Month? My husband and I drink decaf tea almost every night together and our brand of choice is Bigelow. My tea of choice in the evening is Bigelow French Vanilla Decaf or Bigelow Perfect Peach. My husband loves the Bigelow Peppermint Bark. During the day, I love Bigelow Constant Comment, Green Tea with Mango or Vanilla Caramel Black Tea. There are so many good ones and I could recommend 10 more but these are my all-time favorites. Whole-Wheat Cinnamon Streusel Coffee Cake is moist, full of cinnamon flavor and made healthier with whole-wheat flour, less sugar and has a super delicious cinnamon streusel topping.

Prep Time:  10 minutes Cook time: 45 minutes Total time: 55 minutes

INGREDIENTS

  • Cinnamon Coffee Cake
  • 1 3/4 cups white whole-wheat flour
  • 1/2 cup brown sugar
  • 1/2 cup milk of choice
  • 1/2 cup unsweetened applesauce
  • 2 teaspoons cinnamon
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons lemon juice
  • 1 teaspoon vanilla extract
  • Cinnamon Streusel Topping
  • 1 teaspoon cinnamon
  • 1/4 cup white whole-wheat flour
  • 1/4 cup brown sugar
  • 2 tablespoons melted butter

INSTRUCTIONS

  1. Preheat oven to 350 degrees. Spray a loaf pan or small glass baking dish with nonstick spray.
  2. Mix together all ingredients for cinnamon coffee cake and stir well.
  3. Mix together ingredients for cinnamon streusel topping until crumbly.
  4. Pour batter into pan, top with streusel mix and bake for about 30 minutes until cake is cooked through.
  5. Let cool for about 15 minutes and slice.
**Stores well in an airtight container on the counter for a couple of days and in the fridge for 5 days. These loaves can be frozen as well.
