You can make a few days worth at a time, and they are super tasty, filling and nutritious.

When we wake up in the morning, the kids and I are all starving. We wake up ready to eat! When it comes to choosing a breakfast, I go for options that are lower in sugar and that are high in fiber and protein. The morning is a great time to fit in whole grains and boost of fiber to get your day started.

3 healthy meal prep breakfasts
On Sunday and once or twice during the week, I prep a couple of breakfast ideas for my family to eat. I am usually tired at the end of the day and don't want to spend a ton of time in the kitchen after dinner, so about 5 minutes is all that I'm willing to do—which is plenty of time for these protein-packed breakfast recipes.

I decided to make blueberry vanilla chia seed pudding because that is one of my family's favorites. Chia seeds are high in fiber and omega-3 fatty acids. The blueberries are rich in antioxidants and fiber and are a great start to the day. These need to be prepped at least a couple of hours in advance so that the chia seeds can absorb the liquid and turn into a delicious, thick pudding that you will love! You can eat these as is or top with nuts, granola, more fruit or nut butter.


My readers love my strawberry cheesecake overnight oats, so I decided to make cherry cheesecake overnight oats. For the blueberries and strawberries in these recipes, I used frozen fruit to keep it simple and affordable. Oats are a great way to start the morning because they are a whole grain that's rich in vitamins and fiber and helps to keep you full.

Banana Peanut Butter Parfait
For the parfait, I kept it simple with a peanut butter banana parfait. I sliced up some bananas, which are a great source of potassium and fiber, and topped it with some peanut butter and peanut butter granola that I had on hand.

  • 2 teaspoons maple syrup
  • Toppings: extra cherries, crushed graham crackers

  1. Mix all ingredients together for overnight oats in a mason jar. Preferably, let sit in fridge overnight or for at least two hours.
