Though overnight oats have been around for a long time, I recently got into the trend. I had a hard time believing that the liquid would be soaked up by the oats without cooking them since I always eat hot oats. I was pleasantly surprised and really ended up enjoying overnight oats.

Since peaches are in season right now, I thought that I would make a peaches and cream overnight oatmeal for a fun and delicious breakfast. My daughter loved these so much! She said "more, more, more" when I gave them to her! If you want, you could use peach yogurt instead of vanilla for a more peachy flavor.

Ingredients

  • 1 3/4 cups oats
  • 1 1/2 cups milk
  • 1/2 cup vanilla Greek yogurt
  • 1 teaspoon cinnamon
  • 2 tablespoons chia seeds
  • 1 scoop vanilla protein powder
  • 1 peach, diced
Toppings:
  • Extra vanilla Greek yogurt to top
  • Sliced peaches

Instructions

1. Combine all ingredients and mix together well.
2. Let set for at least 30 minutes or preferably, overnight.
3. Top with a dollop of Greek yogurt and fresh, sliced peaches

For this recipe, I used Purely Inspired Organic Protein 100% plant-based nutritional shake which worked well in this recipe to give a boost of protein and nutrients. What I like is that this protein is not too sweet and it does not take over a recipe. The protein mix is dairy, gluten and soy free. Flavors include French vanilla and decadent chocolate.
