Thai Peanut Ramen + Giveaway

My mouth is watering talking about this Thai Peanut Ramen and I know you're going to love it! The broth is made of peanut butter, coconut milk, ginger, garlic, red curry and more. It is a unique soup that is so yummy. Of course, I loaded it with lots of veggies in true Nutritionist Reviews fashion! I couldn't decide if I should use tofu or chicken and chose tofu for this time- use whatever protein you like. Top it with roasted peanuts for a delicious crunch.

Thai Peanut Ramen Bowls

I found out last year that ramen style soup where everyone can put in their own toppings is a huge hit for my family. The kids LOVE getting to build their own bowls and ramen noodles are always a win. I kept this soup on the milder side since I am serving my kids who are 2, 4, and 7. Feel free to add in cayenne powder or red pepper flakes to make it spicy if you like.


For the ramen, I decided on bell peppers, shredded carrots, lime juice, cilantro and green onions. All 5 of us loved this recipe. In the beginning, there was more broth. As the leftovers were in the fridge, the noodles soaked up a bunch of the broth making it more like Thai Peanut Noodles- totally delicious either way.

Thai Peanut Ramen Ingredients

-Crispy tofu- I pan fried the tofu to add to the top so it would keep its crispiness.
-A delicious broth made of Thai red curry paste or powder, chicken broth, coconut milk, peanut butter, garlic and ginger. The peanut butter and coconut make it creamy but it has no cream.
-Bell peppers
-Ramen noodles- a crowd pleaser for my crew
-So many toppings- green onion, shredded carrots, roasted peanuts, lime, baby spinach, cilantro. Feel free to use what you have on hand if you don't have all of these ingredients.

Why Cook with Peanuts?

You know I love peanuts! So much so that I used both peanut butter in the broth of this soup and topped it with more peanuts. Peanuts and peanut butter are used in many areas around the world including Africa, the Middle East, India, Central and South America and more! One reason they're used is because they are an affordable plant-based protein with 19 vitamins and minerals. One ounce of peanuts has 7 grams of protein. 


Studies around the world have researched the benefits of peanuts and PB and have found that peanuts can improve life expectancy, help reduce cancer and type 2 diabetes. For example, one study shows that diets that emphasize plant-based foods like peanuts help protect against cancer. Peanuts have phytochemicals which can block cancer-causing substances and enhance the immune system. Eat up! We sure enjoy peanuts and peanut butter most days of the week.

Thai Peanut Ramen

Thai Peanut Ramen features a flavorful ginger garlic peanut broth with ramen noodles, crispy tofu, cilantro, carrots, peanuts, bell peppers and more for a flavor packed meal ready in 20 minutes!
Prep Time: 10 minutes Cook time: 10 minutes Total time: 20 mins

INGREDIENTS

  • Crispy tofu
  • 2 tablespoons olive oil
  • 1-15 ounce package extra firm tofu, drained
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • Ramen Soup
  • 5 cups low-sodium chicken broth
  • 14-ounce can coconut milk
  • 2 tablespoons low-sodium soy sauce
  • 1/4 cup peanut butter
  • 3 tablespoons Thai red curry paste or curry powder
  • 2 teaspoons chopped garlic
  • 1 teaspoon fresh grated ginger
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 3 packages ramen noodles (discard flavor packets)
  • Toppings
  • Chopped green onion
  • Shredded carrot
  • Roasted peanuts
  • Sliced limes
  • Chopped baby spinach
  • Chopped cilantro

INSTRUCTIONS

  1.  In a large skillet, heat olive oil. Cut tofu into small cubes. Saute for about 8 minutes until tofu is browned and slightly crispy, stirring frequently. Sprinkle tofu with onion and garlic powder.
  2.  In a pot over medium-high heat, combine all ingredients for soup except for the noodles. Simmer for about 5 minutes and then add in the noodles. Cook for 2-3 minutes until noodles are cooked through.
  3.  To serve, scoop Thai ramen soup in a bowl and top with crispy tofu, green onion, shredded carrots, peanuts, a lime slice, baby spinach and cilantro. 
If you serve immediately, there will be more broth available. If you wait to eat soup, the noodles will soap up some of the broth. It is delicious both ways!

  4. this may sound weird but I do like to spread butter on my toast and then add peanut butter. When I lived in England as a child I started to do that and as i grew up I loved how it tasted.
