Happy New Year! The holidays are over and I don't know about you but I'm ready to start packing in the nutrients again to help me feel my best through the winter. Michigan is extra cold and snowy this year so far and nourishing meals are feeling more essential than ever. I love anything with a Greek theme and created these feta meatball bowls which are so delicious but also packed with the nutrients our bodies need. These meatball bowls are wonderful for lunch meal prep so if you're trying to eat healthy this New Year, prep a batch of these Feta Meatball Bowls.

  • Lean Ground Beef
  • Breadcrumbs (panko or regular work)
  • Egg
  • Parsley
  • Feta cheese
  • Garlic powder
  • Oregano
  • Onion Powder
  • Brown rice
  • Tomatoes
  • Red onion
  • Cucumber
  • Greek dressing (or Italian)
  • Garbanzo beans
  • Feta cheese
  • Hummus

How to Make Feta Meatball Bowls

First, you're going to make your feta beef meatballs. They're super easy to make and so tasty! I wanted them to be loaded with feta cheese and they turned out so good. Then, cook your brown rice. Alternatively, you can use orzo or any pasta. Start chopping your veggies for the toppings. Serve everything all together in a bowl! These gyro meatball bowls are awesome for meal prep and can be enjoyed for lunches throughout the week. I made my own hummus since I didn't have any store bought on hand but feel free to use whatever you have. Try my garlic hummus recipe!

These Feta Meatball Bowls are great for meal prep. Just store the orzo/rice with the meatballs, feta and chickpeas. Add the hummus, tomato, red onion and cucumber before eating. This will last a few days in the fridge and you can enjoy it cold or heat it up for lunch.

Why cook with lean beef?

Years ago, it was believed in general that red meat is "bad for you". There are many healthy lean red meat options like cooking with lean beef! I like choosing 93% lean ground beef as a lean protein option. Some other leaner beef choices are: top round, eye of round, sirloin tip and bottom round. Lean beef is a considered to be a nutrient-dense food and it can help support heart healthy diets. Lean beef is rich in nutrients like protein, B-vitamins, iron and zinc. I love feeding my family lean beef for these benefits.

I have 3 growing kids that are very active and I love serving them a protein rich meal with lean beef. The American Heart Association recommends when choosing beef, choose the leanest cuts possible. It helps to trim the visible fat and to pair lean beef with veggies, fruit and whole grains. 

I love that lean beef is quite filling. My kids are always hungry since they're so active and I love knowing that I am giving them a meal that is hearty but nutritious.

Feta Meatball Bowls

INGREDIENTS

  • Greek Meatballs
  • 1 pound lean Ground Beef
  • 1/2 cup feta + 1/2 cup for later
  • 3 tablespoons breadcrumbs
  • 1 egg
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • 1 teaspoon onion powder
  • Gyro Bowls
  • 3 cups cooked brown rice (or orzo pasta)
  • 1 cup chopped tomatoes
  • 1/2 cup onion, thinly sliced
  • 1 1/2 cups English cucumber, diced
  • 1/4 cup Greek dressing
  • 1 can low-sodium garbanzo beans, drained and rinsed
  • 1/2 cup hummus
  • 1 cup pickled beets
  • Lemon slices
  • Parsley to top (optional)
  • Whole-wheat pita

INSTRUCTIONS

  1. Preheat the oven to 350 F. In a large bowl, mix together all of the ingredients for the meatballs. Form the meat into balls that are about 1 tablespoon of meat.

  2. Place on a sheet pan that is sprayed with nonstick spray. Bake for about 15 minutes until meatballs are cooked through and have an internal temperature of 160 F.

  3. Mix together the tomatoes, onion, cucumber and Greek dressing together in a bowl.

  4. Once orzo is cooked, divide orzo into bowls and top with meatballs, cucumber salad, garbanzo beans, a dollop of hummus, beets, the rest of the feta cheese, a slice of lemon and if you desire, parsley.

**Alternatively, you can put out all of these ingredients in bowls and make it so everyone can serve themselves and build their own bowls which makes for a fun meal.
