White Bean Antipasto Salad
White Bean Antipasto Salad is a delicious dense-bean salad loaded with a homemade Italian dressing, great northern beans, salami, parmesan, artichokes, tomatoes, parsley and more!
When summer in Michigan hits, it's time for all things fresh produce- especially Michigan produce! It's my favorite time of year. I love packing my meals with Michigan produce and this White Bean Antipasto Salad is so delicious! I loaded it with white beans, artichokes, tomatoes, cucumber, parsley, salami, a homemade Italian dressing and more! This salad is perfect for summer and makes a wonderful entrée or side dish. It's absolutely packed with flavor and is super fresh with all of summer's best flavors.
As a dietitian, I'm obsessed with the fact that fiber is such a trend right now! I mean, I've only been preaching about the importance of fiber for the last 16 or so years. Women need 25 grams per day and men need 38 grams per day and especially thanks to the beans, this recipe is packed with fiber. This is another take on the viral dense-bean salad that everyone will love.
White Bean Antipasto Salad Ingredients
- Great Northern beans (or other white bean varieties)
- Kidney beans
- Artichokes
- Salami
- Tomatoes
- Parsley
- Cucumber
- Red onion
- Pepperoncini or banana peppers
- Homemade Italian dressing
- Bell peppers
- Shredded Parmesan cheese
Michigan produce
I love growing a lot of my own produce in Michigan in the summer as well as buying it locally. Our favorite place to shop is Eastern Market in Detroit where I buy a ton of produce each summer and fall especially. This recipe features great northern beans from Michigan. Beans are packed with protein and fiber and make a wonderful addition to this recipe. Michigan is known for growing a lot of produce which I could not be more thankful for because I am obsessed with produce. If you haven't visited a big farmer's market before, I could not recommend it more!

White Bean Antipasto Salad
White Bean Antipasto Salad is a delicious dense-bean salad loaded with a homemade Italian dressing, great northern beans, salami, artichokes, tomatoes, parsley and more!
INGREDIENTS
- 2 cans low-sodium Great Northern Beans, drained and rinsed
- 1 can no-salt added dark red kidney beans, drained and rinse
- 1/2 cup shredded parmesan cheese
- 1/3 cup chopped banana peppers or pepperoncini
- 1 1/2 cups halved grape tomatoes
- 1 cup chopped cucumber
- 1 jar artichokes, drained and chopped
- 3/4 cup chopped salami
- 1/2 cup thinly sliced red onion
- 1/3 cup parsley, chopped
- 1/2 orange bell pepper, diced
- 1/2 yellow bell pepper, diced
- Italian Dressing
- 1/2 cup olive oil
- 1/2 cup red wine vinegar
- 1 teaspoon garlic powder
- 1 teaspoon dried basil
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon salt
INSTRUCTIONS
In a mason jar, shake all of the ingredients together for the Italian dressing.
In a large bowl, mix all of the ingredients together including the dressing.
You can enjoy right away or the salad is best if you let it marinate for a couple hours at least!
