Peanut Butter Overnight Oats

Peanut Butter Overnight Oats

It's hot out right now and my family loves a quick, filling breakfast on summer mornings and Peanut Butter Overnight Oats fit the bill! They're high in protein and fiber and taste delicious. My favorite part is that I can spend 5 minutes prepping them the night before and wake-up to a delicious breakfast ready-to-go that feels like zero effort.


Peanut Butter Overnight Oats Ingredients

  • Oats- old fashioned works best but you can use quick oats in a pinch
  • Milk of your choice
  • Plain Greek yogurt (or vanilla)
  • Peanut butter
  • Chia seeds
  • Peanut protein powder or vanilla protein powder- I love this for a boost of protein to keep me full throughout the morning
  • Peanuts to top, extra peanut butter to drizzle, and fruit 

How to Make Peanut Butter Overnight Oats

First, mix all the ingredients together (except for the toppings) in a large bowl. Cover the bowl with plastic wrap or a lid. I like making it all in one bowl and then when they are mixed up, I like to transfer to individual mason jars if you're taking them on the go. When you're ready for breakfast, just serve up a bowl of oats or enjoy from your mason jar. Top with peanuts, a drizzle of peanut butter and/or fresh fruit. Strawberries, apples, bananas, or any jam are really good on top.

I love adding peanuts and peanut butter to my meals! For breakfast today, I had a whole-grain English muffin with peanut butter and yesterday, I had a cottage cheese bowl with peanut butter and fresh strawberries. Peanuts are a great addition to your diet because they are a good source of protein, fiber, vitamin E, magnesium, potassium and other vitamins and minerals. They have 19 vitamins and minerals and are considered an energy dense food thanks to the protein and fat they contain.

A one-ounce serving of peanuts has 7 grams of protein – the most of any nut – making them a great source of plant-based protein. Better yet, they also have fiber and healthy fats, which help power my family through the day. And, the 3 grams of fiber per serving helps you feel fuller after a meal and aids digestion.

INGREDIENTS

  • 1 cup oats (old-fashioned or quick oats)
  • 1 cup milk 
  • 1/2 cup vanilla Greek yogurt (or plain)
  • 3 tablespoons peanut butter
  • 1 tablespoon chia seeds
  • 1 scoop peanut butter protein or vanilla protein powder
  • Optional: sweetener of choice
Toppings
  • Drizzle of peanut butter
  • Crushed peanuts
  • Fresh fruit (raspberries, strawberries, bananas, apples, jam)

INSTRUCTIONS

  1. Mix all ingredients together (except for the toppings) in a large bowl. Spoon the mixture into 2 pint-sized mason jars. 
  2. Let sit in the fridge overnight or for at least two hours. Top with fresh fruit, peanuts and a drizzle of peanut butter!
