Chimichurri Steak Bowls

Chimichurri Steak Bowls make the perfect flavor packed meal with homemade chimichurri sauce, grilled steak, peaches and veggies all served over a bed of orzo! 

Chimichurri Steak Bowls

When you want a meal that is easy to make but will wow your guests, Chimichurri Steak Bowls are the answer. They have the most delicious chimichurri sauce which is made with parsley, cilantro, red onion, olive oil, and red wine vinegar. You will want to use this sauce on everything! I served mine with steak, orzo pasta, peaches, grilled red onions, and bell peppers. I bought as much of the ingredients for this recipe from my local Michigan farmer's market.


Doesn't everything just taste better when it's served all together in a bowl? This is one of my favorite ways to make meals because it's super versatile. Even if you just switch up the sauces, your bowl is going to taste completely different. I love using what I have on hand. If I had zucchini, asparagus or mushrooms, I would also grill those and add them to my bowl.

As a dietitian, girl who grew up often on a farm and produce enthusiast, I am quite literally obsessed with Michigan agriculture. I buy as much as my food from my state as possible and right now, MI produce is booming! I bought a bunch of the ingredients for these Chimichurri Steak Bowls from my local farmer's market!

Chimichurri Steak Bowls

Yield: serves 4-6 

Chimichurri Steak Bowls

Chimichurri Steak Bowls make the perfect flavor packed meal with homemade chimichurri sauce, grilled steak, peaches and veggies all served over a bed of orzo! 

Prep Time: 10 minutes Cook time: 20 minutes Total time: 30 mins

INGREDIENTS

  • 1-lb orzo pasta, cooked
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 4 4-6 ounce steaks
  • 2 red bell peppers, cut into 1-inch pieces
  • 1 large red onion, cut into 1-inch pieces
  • 1 large zucchini, cut into pieces
  • 2 ripe peaches, sliced
  • 2 cups arugula 
  • Chimichurri sauce
  • 1 cup parsley
  • 1 cup cilantro
  • 1/2 cup red onion, diced
  • 5 peeled cloves of garlic
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 tablespoons lemon juice
  • 1/2 teaspoon salt

INSTRUCTIONS

  1. Toss peppers, zucchini onions and steak with olive oil and garlic powder and grill until the steak is done how you like it and veggies are charred a bit.

  2. In a blender, combine all of the ingredients for the chimichurri sauce and pulse until mostly blended. 

  3. To serve, top orzo with sliced steak, peppers and onions, sliced peaches, arugula and a hearty serving of chimichurri sauce.
