Paninis and Farmer's Salad

For lunch I had the most delicious panini which consisted of:
*5 Grain light bread
*Lunch meat ham
*Sliced colby deli cheese
*Fresh baby spinach
*A tablespoon or so of sauerkraut
*Sliced tomatoes
It was grilled on my mini George Foreman and was so good!

For a snack, I made a treat that I grew up having all the time called Farmer's salad. It consists of:
-Sliced tomatoes
-Chopped onions
-Vinegar (I used balsamic)
-Black pepper
-Salt (I used hot chile lime salt)

My grandpa (Dzia-dzia in Polish) who passed away in September of 2005 used to love this snack.  Although if he cut up the veggies it would have looked much nicer.  He was very precise in cutting up food! I could eat this snack all day any day! It is simple to make and tastes SO good.
