Summer Kick-Off Party

I love summer! The food is absolutely the best, the weather is finally warm and there seems to be so much more to do than during the rest of the year. We love getting together with friends and family but it can be hard to do so with busy schedules, not having childcare to go out, etc. We decided to have friends and family over for a summer kick-off party.


We also had another reason to celebrate: it was my last day of work! Surprise! I left my current job to go to another nursing home that is much closer to home. I will be working 4 days per week and will be only 11 minutes from home instead of 40+! Yay! More time with my baby = the best!


We asked everyone to bring an appetizer to the party which I thought would be a really fun way to be able to try a lot of different types of foods. The party went great and we had a lot to eat. I made bruschetta and Texas caviar- some of my favorite appetizers. Both are fairly easy and healthy.

For this meal, I created some foods that you could have at a summer party. Hotdogs with a fresh salsa-type topping and a bunch of marinated, grilled vegetables- delicious! The thing that I love about grilled vegetables is that they are so easy, healthy and flavorful. Almost any vegetable can be grilled. Just toss with your choice of marinade (even just a little olive oil if you like it simple), toss on the grill and enjoy the smoky grilled flavor.

Asian Marinated Grilled Vegetables

Ingredients:
Your choice of vegetables (I used asparagus, green beans, portobello mushrooms, baby eggplant and baby squash)
2 tablespoons sesame oil
2 tablespoons rice vinegar
1 tablespoon low-sodium soy sauce
1 tablespoon black sesame seeds
Garlic powder
Black pepper

Directions: Toss all ingredients together and let marinate for a few hours (or more). Grill on a grill mat so that food does not fall through. Enjoy!



Healthy and Fresh Summer "Salsa"

Ingredients:
1 diced tomato
1 tablespoon diced red onion
6 diced pickled jalapenos
2 tablespoons diced bell peppers
2 tsp lime juice

Directions: Combine all ingredients together and serve over Hebrew National All-Beef Franks. I recommend using a whole-wheat bun or bread.


This meal was delicious! Simple, fresh and quick- all things that I love.


For this meal, we used Hebrew National All-Beef Franks. Although I am a dietitian, I still like to enjoy a variety of foods and nothing is off limits. I love having a hot dog fresh off the grill! Delicious! I like Hebrew National All-Beef Franks because they are higher quality than some other brands. We tried the 97% fat free beef franks. My husband said that he really enjoyed these and would get these next time we needed hot dogs instead of the full-fat ones.
