Chai French Toast Muffins

Chai French Toast Muffins
The idea for these "muffins" came to me while I was making them. They were originally going to be apple cinnamon flavored but then I saw the chai tea in my fridge and thought it would make an awesome addition to these French toast muffins. I was right! They were full of flavor and made a great breakfast.

My baby ate two of these for breakfast along with a bunch of fruit and coconut butter. She loved them! My husband enjoyed them as well  and had his with syrup. I had mine with fruit, peanut butter, a bit of syrup and coconut butter. All of the ways were delicious!

Chai French Toast Muffins
These would be great for kids on a school morning when you are in a hurry. I prepped everything the night before and then just threw them in the oven for 30 minutes first thing in the morning. Easy and delicious!

Ingredients:
3 eggs, beaten
2 tablespoons ground flax seed
2 teaspoons cinnamon
1 tablespoon sugar
2 teaspoons vanilla extract
1/2 cup milk of choice
1/2 cup chai tea concentrate (or very strong chai tea)
9 sliced of whole-wheat bread, cubed

Directions: Mix all ingredients together except for bread and stir well. Mix in bread cubes until all are coated. Let sit overnight (or at least for 5 minutes). Bake in the oven at 350 degrees until no liquid remains and top of muffins are crisp.

Enjoy right away or save for during the week for a quick breakfast. I made enough that Adalyn can eat these through the week. They make a great breakfast for her. She was covered in flax bits by the end  of her meal! 

For this recipe, I used Purely Inspired 100% plant based protein nutritional shake which worked well in this recipe to give a boost of protein and nutrients.
