Back when I was in undergraduate school to become a dietitian, I had to take a cooking class as one of my required classes. It ended up being my favorite class in college because we got to cook and eat- two of my favorite things. We had to buy a cookbook and cooked all kinds of food out of it. I remember trying swordfish for the first time in that class along with many other foods.

One of the dishes that we made that I will never forget and make all of the time at home is roasted Dijon green beans. These beans are easy to make and taste amazing. I make them in large batches and eat them for meals and snacks because they are so good. We used to make boiled asparagus for Easter but now make these roasted Dijon green beans instead because my whole family loves them.

Green beans are rich in antioxidants and carotenoids. They have fiber, vitamin K, manganese, folate, vitamin C and more. I love these roasted but also love snacking on raw green beans for a snack.
