Mini Bell Pepper Nachos are a healthier vegetarian version of your favorite appetizer, ready in just 15 minutes and are topped with cheddar cheese, tomatoes, green onions and more!
My sister recently made bell pepper pizzas which is a really neat idea as well. Instead of a bread crust, you just use a bell pepper. For this recipe, I decided to use mini bell peppers since I thought that they would be easier to pickup than a large bell pepper.
You can fill these with your favorite nacho toppings. I chose to use MorningStar Farms® Grillers® Crumbles™ in mine along with cheddar cheese, plain Greek yogurt instead of sour cream, fresh sliced jalapenos, green onion and tomatoes.
You can also use black beans, meat, a different kind of cheese, corn, onions, refried beans, salsa or hot sauce. They are a healthier option than typical nachos and are more of a complete meal instead of just an appetizer.
Mini Bell Pepper Nachos
Prep Time: 5 minutes
Cook Time: 10 minutes
- 1 pound mini bell peppers, halved and seeded
- 1 cup MorningStar Farms Grillers Crumbles
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 cup shredded cheddar cheese
- 1/4 cup plain Greek yogurt
- Toppings: sliced green onions, diced tomatoes
1. Preheat oven to 400 degrees.
2. Mix together crumbles, chili powder, cumin and garlic powder.
3. Spray a baking sheet with nonstick spray and lay bell peppers on tray. Top with crumbles and cheese. Bake for 8-10 minutes until cheese is melted and bell peppers are slightly softened.
4. Top with Greek yogurt and your choice of toppings.

For this recipe, I used MorningStar Farms Grillers Crumbles from Walmart. They were very tasty and I did not miss the meat at all. Even better would have been the MorningStar Farms Chipotle Black Bean Crumbles™ but my store did not have them. We love using these products anytime of year and they are especially helpful to have on hand during Lent. As we preparing for baby #2 in the next few weeks, I stocked my freezer with some of these products for quick meals. I especially love them for lunches on top of a salad or on a whole-wheat bun.
I also picked up some of the MorningStar Farms Original Sausage Patties for delicious breakfasts. I put these on an egg sandwich or just eat them plain. The maple variety are my favorite and when I have these on hand, I cannot stop eating them. So, so good! These products are a good low cost option as they are often cheaper than meat. Plus, they taste so good!
