Sausage, Potato, and Kale Stew
Ingredients:
1 large link of turkey sausage
5-6 chopped up small yellow potatoes
1 chopped red onion
1/2 bunch chopped fresh kale
5 fresh garlic cloves
1 large can low-sodium crushed tomatoes
Steps:
Chop up all ingredients and stir fry in a pan for about 20 minutes. Add can of crushed tomatoes. Simmer for 10-15 minutes more until potatoes are well cooked. Add spices to taste (I added Franks Red Hot). Enjoy!
This stew was simple and delicious to make. I found a recipe in Cooking Light magazine that was similar and made it my own!

This reminds me of the Zoupa Tosca (or something like that) from Olive Garden. It's a cream version (no tomatoes) with potatoes, kale and sausage. It's my absolute fav!
