Energy Bites Snack


These simple Energy Bites come together in no time and are an easy, filling and tasty snack!


A couple of weeks ago, my sister and I had a girls night together when my husband went snowboarding. We had a blast. We went out to dinner, put Adalyn to bed, made these awesome energy bites and then had some wine and chatted. We made these energy bites using a bunch of tasty ingredients that I had on hand. They are high in protein, whole-grains and fiber.


They are good for anyone but are especially great for nursing moms because they contain flax and oats which can help increase milk production. These refrigerate well and made excellent snacks all week.



Energy Bites

Ingredients:
1 cup oats
2/3 cup peanut butter
1/2 cup ground flaxseed
1 cup shredded coconut
1 scoop Purely Inspired vanilla protein powder
1/3 cup honey
1 teaspoon vanilla extract
1/2 bar dark chocolate, chopped
1/3 cup dried cranberries

Directions: 
1. Melt peanut butter in microwave.
2. Combine all ingredients and mix very well.
3. Refrigerate mixture for 1 hour or until dough is cold and firm.
4. Roll into balls and store bites in fridge for up to 10 days.

Purely Inspired 100% Plant Based Protein Nutritional Shake
I was recently sent this Purely Inspired 100% plant based protein nutritional shake which worked well in this recipe to give a boost of protein and nutrients. It is dairy, gluten and soy free. One serving has 16 grams protein and 7 grams of fiber. It contains a concentrated greens blend with broccoli and spinach. It is a blend of proteins including pea protein, brown rice protein and alfalfa juice protein concentrate.

This protein could also be used in many recipes such as oatmeal, smoothies, baked goods, shakes, pancakes and more. I do not use protein powders all the time but think that they can be a good way to get some additional protein in your diet if you are lacking.
