Greek or Mediterranean food is easily my favorite kind of food. It is so fresh and delicious. I could eat it for nearly every meal. I have a huge list of recipes that I want to make eventually and have had "some kind of Greek zoodles" on my must-make list for quite awhile. I finally decided to make them once the weather got nicer and am so happy with the results.

Zoodles are zucchini noodles and they are an awesome option to have for a meal instead of pasta- though pasta is great too. I topped this dish with lots of feta cheese, tomatoes, onions and kalamata olives for a Greek style dish.

The Greek meatballs are so easy to make. I skipped the egg and breadcrumbs that often go in meatballs and they still came out great. These are toddler friendly and my husband loved them too. This dish was so delicious! I loved the salty feta, slightly crisp zucchini noodles, tomatoes, and more. It tasted a lot like a Greek salad but even better. I'm sure that I will be making a million variations of this all summer long.

Greek Meatballs with Spiralized Zoodles

Cook Time: 20 minutes

Servings: 4

Ingredients 

    Greek meatballs
    • 1 pound lean ground beef
    • 2 tablespoons green onion, diced
    • 1 garlic clove, minced
    • 1 teaspoon cumin
    • 1 teaspoon oregano
    • 1/2 teaspoon black pepper
    Zoodles
    • 1 tablespoon olive oil
    • 3 zucchini, spiralized
    • 1/2 red onion, diced
    • 1 large tomato, sliced
    • 1/4 cup feta cheese
    • 2 tablespoons kalamata olives, sliced
    Simple lemon vinaigrette
    • 1/4 cup lemon juice
    • 2 tablespoons olive oil
    • 1 teaspoon oregano
    **This is the spiralizer that I love!

    Instructions

    1. Combine all ingredients for meatballs together and roll into balls. Cook in oven at 350 for about 20 minutes or until cooked through.
    2. In a pan, heat oil. Add in zoodles and cook for about 3-4 minutes until slightly cooked through. Turn off pan.
    3. Whisk together lemon vinaigrette.
    4. Add zoodles to bowl. Top with meatballs, raw red onion, tomato, feta cheese and olives. Pour dressing over bowls and enjoy!
