I have gotten lazy using my spiralizer but it is such a great way to eat a variety of vegetables in different ways. This past summer, Adalyn and I spiralized carrots and cucumbers with this dressing and loved the results. I finally got around to making it again to share with all of you. I am vowing to get back to using the spiralizer more in 2017 because it makes the most beautiful vegetables that my whole family is excited to eat.

This recipe is flavorful and so easy to make. You could also use zucchini noodles if you prefer. If you do not have a spiralizer, you could just chop the vegetables or shave them into thin strips with a peeler. The main deliciousness from this recipe comes from the sauce. It is a tangy peanut sauce that will have you wanting more and more.

It is healthy and can even be made ahead of time and stored in the fridge. To save time, I made mine the night before and just spiralized my vegetables the next day and it turned out perfectly. Adalyn absolutely loved this recipe! In fact, as I was telling her not to, she took a huge handful of noodles! Then, I cut some up for her and she ate them for a pre-breakfast snack haha.

Peanut, Cucumber and Carrot Noodle Salad

Prep Time: 5 minutes
Servings: 4

Ingredients 

  • 1 large English cucumber, spiralized
  • 3 large carrots, peeled and spiralized
  • 2 tablespoons Purely Inspired powdered peanut butter
  • 2 tablespoons sesame oil
  • 2 tablespoons rice vinegar
  • 1/2 teaspoon black pepper
  • 1 teaspoon sesame seeds
  • 2 tablespoons chopped peanuts

Instructions

Whisk all ingredients together for dressing. Pour over spiralized vegetables and mix well. Sprinkle with sesame seeds and chopped peanuts. Enjoy!

This powdered peanut butter has 90% less fat per serving than peanut butter. I do not typically use it in place of PB but like to add it to different sweet and savory dishes to use in a different way. It can give great flavor to foods. It is only made with roasted peanuts, sugar and salt and has 6 grams of protein per serving. I also like it mixed into yogurt for a peanut butter Greek yogurt, I eat it daily in my oatmeal (along with chia seeds, ground flax and topped with peanut butter) and it is tasty in smoothies.
