Since the summer, I have had anything chocolate cherry on my mind. I was never a fan of chocolate covered cherries but over the summer, I decided to make a Chocolate Cherry Smoothie Bowl and I was sold on chocolate cherry everything! Anytime I have seen dried cherries on a menu my entire life, I have pretty much ordered the dish. Michigan Cherry Salad with Cherry Vinaigrette is definitely a favorite and so is Cherry Chicken Pasta which I order every year for my mom's birthday.

Today, I decided to make a healthy snack to share with you! I made these Chocolate Cherry Truffles with the holidays in mind but they are totally healthy and can be made anytime. They have no-added sugar- the sugar in them comes from dried fruit. They are gluten-free, vegan and totally delicious.

When I started making these, I pretty much just threw different things in the blender (measuring them out first) and they came out perfectly. I am in love! Adalyn loved them too and was so excited to try these chocolate cherry bites.

I used dried plums in the recipe, not prunes. If you can't find those, you can totally use dates or raisins instead. Whatever mild flavored dried fruit you can find should work fine. They take just a few minutes to make, chill for 20 minutes and then roll into balls. Very easy!  If you love baking but want a healthier treat, these energy bites are perfect because they taste indulgent, look pretty but are quite nutritious.

Chocolate Cherry Truffles

Servings: About 8
Serving Size: 2 truffles
Prep time: 10 minutes

Ingredients:

1/2 cup dried plums or any dried fruit
1 tablespoon water
1/2 cup almonds
1/2 cup peanuts
1/2 cup dried cherries
1/2 cup dark chocolate cocoa powder
Optional: extra cocoa powder to roll in

Instructions:

1. In a microwave safe dish, heat dried plums or other dried fruit with water for 1 minute. Let sit as you measure out other ingredients.
2. In a food processor, combine almonds, peanuts, dried cherries, dark cocoa powder and then dried fruit with the water.
3. Blend until very smooth, scraping the sides with a spatula as needed.
4. Refrigerate for 20 minutes.
5. Roll into bite sized balls. Roll in cocoa powder if desired. Enjoy!
**Can be stored in the fridge for up to a week.
