The weather has finally gotten nicer! As I'm typing this, we are expected to have our first day that is 70+ degrees and I am so excited. With the nicer weather comes lighter and fresher foods and I love it. I am all about fresh produce and this meal made the perfect lunch. I made it in quantity and my kids and I enjoyed it a couple of days in a row for quick lunches.

I used a bean based pasta which is my favorite and I also love using whole-wheat noodles in pasta recipes. I had a couple of zucchini and summer squash on hand and decided to spiralize them instead of chopping them up and my whole family loved it. With the Greek theme of this recipe, feel free to add in olives, chickpeas, chicken, beets or anything else you enjoy.

Spiralized Greek Pasta Salad

Spiralized Greek Pasta Salad makes the perfect lunch or side dish with spiralized zucchini and summer squash, bell peppers, tomato, feta and a homemade vinaigrette.

INGREDIENTS

  • 1 pound of whole-wheat or bean based pasta
  • 1 summer squash, spiralized
  • 2 zucchini, spiralized
  • 1/2 red pepper, dice
  • 1/2 green pepper, diced
  • 1 tomato, diced
  • 1 teaspoon black pepper
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • 1 teaspoon garlic powder, 1 teaspoon Italian spices
  • 1/3 cup feta cheese

INSTRUCTIONS

  1. Cook pasta according to directions. 
  2. Spiralize zucchini and summer squash (or use bought spiralized noodles)- saute for a few minutes if desired.
  3. Whisk together olive oil, red wine vinegar, black pepper, garlic powder and Italian spices.
  4. Toss all ingredients together. Enjoy!
