When my husband cooks, he often chooses more basic recipes but one day a few years ago, he was reading a magazine that had a recipe for Moroccan Chicken and he tore it out and wanted to make it the next weekend. I couldn't believe it as fruit isn't his favorite and it had at least a couple of varieties of fruit in it. Plus, it was a dish with all different types of flavors and spices. I was definitely interested in trying it as I love all different kinds of foods. We ended up loving it and over the years, have adapted the recipe into our own and I wanted to share it with you.

There are so many different ways to make Moroccan chicken and I used ingredients that I had on hand. For the prunes, raisins or dried apricots will also work. Typically, Moroccan chicken dishes call for olives which I love but my husband would totally skip anything with olives so I left them out. If you are an olive lover, feel free to add them in.

This comforting dish is perfect for those cold months where a hot meal sounds so perfect. I like to make a big batch of this Moroccan chicken and serve it through the week. It is pretty much a "set it and forget it" type meal as you just put everything in the slow cooker and let it do it's thing. Then, you just need to cook some rice or quinoa. I like quick cook rice, instant rice or like cooking big batches ahead of time and then freezing for when I need it another time.

My family loves cooking with pears because not only are they super tasty but they are also packed with nutrition. Did you know that pears are one of the highest fiber fruits? One medium pear has about 6 grams of fiber and is rich in vitamin C. Some ways that we love eating pears are: sliced on peanut butter toast, to add sweetness to homemade cranberry sauce, in seasonal salads and on a cheese board. Try some pears in your next dish soon!

Slow Cooker Moroccan Chicken is loaded with flavor, tender chicken, carrots, pears, Moroccan spices and more for the perfect cozy meal! Serve over brown rice, cauliflower rice or quinoa.
Prep Time:  10 minutes Cook time: 6 hours Total time: 6 hours, 10 mins

INGREDIENTS

  • 2 pounds boneless skinless chicken breasts
  • 4 large carrots, cut into bite sized pieces
  • 1 medium onion, chopped
  • 28-ounce can diced tomatoes
  • 1/3 cup prunes, diced
  • 2 medium pears, diced
  • 3 cloves garlic, minced
  • 2 teaspoons cumin
  • 2 teaspoons paprika
  • 1 teaspoon black pepper
  • 2 teaspoons cinnamon
  • 1 can low-sodium chickpeas, drained and rinsed
  • 5 cups cooked brown rice, quinoa or cauliflower rice
  • Parsley to top

INSTRUCTIONS

  1. Combine all ingredients in slow cooker except for rice and parsley. Mix well and cook on high for about 6 hours until chicken is very tender and vegetables are soft.
  2. Cook rice, quinoa or cauliflower rice.
  3. To serve: scoop rice or quinoa in bowl and top with chicken mixture. Sprinkle with fresh parsley.
