Mother's Day is right around the corner and what better way to celebrate than cooking for your mom! We will be up north at my parent's farm this year for Mother's Day and my siblings and I always make awesome meals to celebrate. I am a mom of two kids myself now so I know that my husband will be planning a special celebration for just me and I'm excited about it. This Mother's Day, I'm sure that we will be enjoying some wine at my parent's farm as part of our Mother's Day celebration and JaM Cellars Butter is our wine of choice!

This meal would be perfect for a Mother's Day lunch or dinner paired with a class of JaM Cellars Butter Chardonnay. This wine is perfect to have a glass of and relax on Friday or Saturday night.

They are full of flavor and are the perfect way to celebrate any event. I am not typically a fan of chardonnay except with this brand which is so delicious! It is rich and bold and made with cold fermentation for extra creaminess with an oak blend. For Mother's Day this year, I know that we will be celebrating with a nice breakfast, lunch and dinner together as well as a trip to church and my mom and I's favorite thing to do together: play games, talk and play with the kids. And of course, a glass of JaM Cellars wine.

I love everything Greek inspired and so does my mom so I decided to make Greek Stuffed Chicken with a side of dill roasted potatoes. Simple yet loaded with delicious flavors. Stuffing chicken is super easy. You just cut halfway through the chicken while just barely keeping it together and stuff with feta cheese, tomatoes, red onion and diced bell peppers. Then cover in a delicious lemon marinade and bake in the oven. On the same pan, you can roast your potatoes making dinner come together in no time at all.

Greek Stuffed Chicken

Greek Stuffed Chicken is loaded with feta cheese, tomatoes, red onion, spinach and bell peppers and marinaded in a delicious lemon dressing for the perfect meal!

INGREDIENTS

  • 1-1 1/2 pounds boneless, skinless chicken breasts
Stuffing
  • 1/2 cup feta cheese
  • 1 red onion, very thinly sliced
  • 1-2 tomatoes, thinly sliced
  • 1 red pepper, thinly sliced
  • 1 cup spinach leaves, diced
Marinade
  • 2 tablespoons olive oil
  • Juice from 1/2 lemon
  • 1 teaspoon garlic powder
  • 2 teaspoons oregano

INSTRUCTIONS

  1. Cut each chicken breast across the long ways but not all the way through.
  2. Stuff the chicken with feta cheese, spinach, red onion, tomatoes and red pepper. 
  3. Mix together the marinade for chicken and pour over stuffed chicken breasts and let marinate for at least 15 minutes or longer if possible. Meanwhile, preheat oven to 400 degrees.
  4. Bake for about 25-30 minutes until chicken is cooked through. Enjoy!
