Summer get-togethers are the best. I love getting together with family or friends and each person brings their favorite dishes to share. Potluck picnics, backyard cookouts and outdoor concerts are my favorite. My mother-in-law recently came over and brought this dip for a backyard cookout and it was amazing. No one could stop eating it! While you're making this dip, pour yourself a little glass of wine to enjoy!
There was a bunch leftover and I brought some to share with my parents and they loved it as well. So much so that we have all been talking about it for over a month! That's when I decided that I had to make it myself and share the recipe with you. My mother-in-law Wendy made up the recipe herself and kindly shared it with me to share with all of you. If you love artichokes and garlic, you will love this dip!

You can eat it with toasted pieces of garlicky dill baguette like I did or make it even easier and serve with some pita chips or crackers. Her original recipe had black olives but since Troy is not a fan, I decided to skip them and added some fresh dill for flavor and color instead. If you're an olive lover, feel free to add those in. If you are someone who enjoys red wine, you will really enjoy this dip with a glass of JaM Cellars Cabernet. I am usually not so brand specific with wines but when I tried this version a couple of years ago, I fell in love!

While we enjoyed this in our backyard, this would also be perfect for fall with tailgating, fall bonfires, Halloween parties and more. It is super simple and delicious. I don't want summer to end and with this dip, it can feel like summer all year round with this fresh tasting, addictive dip.

I paired this garlic tomato artichoke dip with one of my favorite wines that we have been enjoying for a few years now called JaM Cellars wine. We like the JaM Butter Chardonnay and the JaM Cabernet. My favorite is the JaM Cabernet- it is the best! It is so flavorful and rich. It pairs amazingly well with this dish- even at 5 PM. It is a high quality wine that makes the perfect addition to a fun summer or fall get-together. They also have a Toast Sparkling wine which I want to try one day. These wines can be found for less than $20 at a store near you.

The Butter Chardonnay has a melt-in-your-mouth flavor and is truly buttery. It has a blend of oak with stone fruit, baked-lemon and has a vanilla finish. The Cab has flavors of blackberries, plums, black currants, cassis and more. They both pair well with this dip for super easy entertaining. The dip takes about 5 minutes to make (plus the time to toast the baguettes if you choose to make those) and just pop open a bottle or two of this wine for the most delicious pair. Garlic Tomato Artichoke Dip

Servings: 6
Prep time: 5 minutes
Cook time: 10 minutes

Ingredients:

1 can artichoke hearts, chopped
1/2 cup cherry tomatoes, chopped
2 cloves garlic, minced finely
1 tablespoon red onion, thinly sliced
1 tablespoon fresh dill, finely chopped
~1/2 teaspoon black pepper
2 tablespoons white balsamic vinegar
1 tablespoon olive oil

Toasted Garlic Baguette
1 French baguette, cut into ~1 inch slices
2 tablespoons butter
2 cloves fresh garlic, minced
1 tablespoon fresh dill, finely chopped

Instructions:

1. Preheat oven to 350 degrees. Spread sliced baguette with butter and sprinkle on dill and garlic. Bake for 10 minutes until toasts are crispy.
2. Mix all ingredients together for dip. 
**Can enjoy immediately or store in the refrigerator for a few hours or overnight to let mixture marinade for a more blended flavor.
