With summer right around the corner, we seem to do a lot more entertaining than any other time of year. It is so easy just to invite family or friends over to our backyard to hangout, enjoy some drinks and food and enjoy the nice weather.

I love anything "BLT"- what is not to love? Crispy, flavorful bacon, juicy cherry tomatoes and crisp lettuce. I got the idea for these BLT bites because I wanted to make an appetizer with these ingredients but wanted something small and cute. These fit the bill! I am not a fan of mayo so I used a creamy ranch dressing with dill added for flavor. If you prefer mayo, feel free to use that.

BLT Bites

Prep Time: 10 minutes
Servings: 4

Ingredients 

  • 4 slices bacon, cut into quarters
  • 16 cherry tomatoes
  • 1 cup iceberg lettuce, cut into chunks
  • 1/4 cup light ranch dressing
  • 1 teaspoon dried dill

Instructions

1. Cook bacon pieces according to instructions- I prefer using the microwave to make it quick.
2. Take toothpicks and thread pieces of lettuce, bacon and tomato onto toothpick. Continue until all ingredients are used.
3. Mix together ranch dressing and dill.
Serve immediately. Enjoy!

There are two different kinds and both have quite different flavor notes. The Notable California Chardonnay has notes of butter, oak and vanilla. The Notable Australia Chardonnay has notes of citrus, melon and peach. They highlight the flavor profiles right on the front of the bottle which makes it easier to know what you're getting right in the store. Both wines great and fun to serve at a party. They go well with these super easy appetizers!

It would be fun to have a blind taste testing with these to see if you can tell which one is which by looking for the different flavor notes expected in each one. Also, National Chardonnay Day is May 21st so pickup a bottle to celebrate.
