My favorite holiday in the world is almost here: Easter! With Easter comes lots of hard-boiled eggs so I wanted to share my healthy deviled eggs recipe with you. Deviled eggs are a treat in my family because for some reason, we rarely make them. We pretty much only remember to make them for holidays like Thanksgiving and sometimes for Easter even though we love them so much.Whenever I make them, I try to share a few with my parents because we all enjoy them. I hope you enjoy this healthy deviled eggs recipe.

These healthy deviled eggs would be perfect for an Easter appetizer, side dish or a great idea of what to do with your leftover dyed Easter eggs. You can just take already boiled eggs, peel them and make these deviled eggs within about 10 minutes. We like a lot of flavor in our deviled eggs and therefore, add chopped dill pickles, mustard and a little vinegar. I've made them for parties before and they are always one of the first appetizers gone.

How to Make Healthy Deviled Eggs

What makes these healthy deviled eggs a little healthier is that I use light mayonnaise and lots of flavor so that you need less fat than if you didn't use the flavorful ingredients like pickles and mustard. I also do not use all of the egg yolks because when I am filling the egg whites with the egg yolk filling, there is always a bunch leftover. My husband had the best idea to use it for potato salad and it was awesome.

I actually called my mom for a tip on how to make the best hard-boiled eggs. We recently had them at her house and they were super fresh, nice bright yellow egg yolks and were somehow better than usual. They are also super easy to peel which if you know hard-boiled eggs, they can be such a pain! This recipe uses her method that she recently learned to make the easiest hard-boiled eggs.

INGREDIENTS

INSTRUCTIONS

  1. Boil a large pot of water. Once boiling, carefully place eggs on a spoon and drop into boiling water. Cook for 12 minutes.
  2. Drain boiling water and fill pot with ice and cold water. Peel eggs immediately.
  3. Slice eggs in half and carefully squeeze out yolks into a bowl.
  4. Mash yolks with a fork and mix all ingredients together except paprika.
  5. With a spoon, carefully fill egg whites with yolk mixture. Sprinkle with paprika.
