I know that you guys love overnight oats recipes like I do because they always do really well on my site. My kids love them too which is why I am always creating new healthy overnight oats recipes. Anything cheesecake always sounds amazing to me so I decided to combine some of my favorite flavors: lemon and cheesecake to make these super easy Lemon Cheesecake Overnight Oats. I hope you love them like we did!

How to Make Overnight Oats

I always use the same formula when making overnight oats: 1 cup oats, 1 cup milk, 1/2 cup Greek yogurt, 1 tablespoon chia seeds. It is optional to add a couple of tablespoons of protein powder for an extra boost of protein and of course, add in whatever ingredients you need to make it a certain flavor such as fruit, cream cheese, peanut butter and sweeteners.

Overnight oats are best prepped the night before or at least two hours before you plan to eat them. This is so that the oats can soak up the liquid and so the chia seeds can swell up making a delicious, thick and creamy breakfast. Lemon cheesecake overnight oats are amazing for meal prep and I typically prep at least two days at a time for the kids and I. They last all week in the fridge and taste just as fresh when you eat them as when you make them.

Easy Lemon Cheesecake Overnight Oats
I love a tart lemon flavor so I used lots of lemon juice and lemon zest on these overnight oats but if you like them sweeter, feel free to add more honey to your liking. If you want, you can even add in some fresh or frozen blueberries for extra deliciousness and top with graham cracker crumbs. Yum!

INGREDIENTS

  • 1 cup oats
  • 1 cup milk
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon chia seeds
  • 2 tablespoons reduced-fat cream cheese
  • Juice from 1/2 lemon
  • Zest from 1 lemon
  • 1-2 tablespoons honey
  • 1 teaspoon vanilla extract

INSTRUCTIONS

  1. Mix all ingredients together for overnight oats. Preferably, let sit in fridge overnight or for at least two hours.
