Chicken Gyros with Tzatziki

Greek and Mediterranean food is my absolute favorite and I could eat it every single day. That probably doesn't come as much of a surprise to you since I am constantly posting all different Greek-inspired recipes on my blog! It was finally time that I made some chicken gyros with homemade tzatziki sauce to share on the blog! They are loaded with flavor and are so perfect for summer.

Healthy Tzatziki Sauce

My mother-in-law makes the very best tzatziki and on Memorial Day when she made it, I ate pretty much a whole bag of pita chips with the delicious tzatziki. I asked for her recipe to share for this post. If you haven't made tzatziki yourself, don't be intimidated! It is actually very easy and is just a blend of Greek yogurt, fresh garlic, grated cucumbers and a couple of other ingredients. It is actually quite healthy for such a tasty and creamy dip! I absolutely love it! It is my very favorite sauce and it easy to make.

Greek Marinated Chicken

On Memorial Day, I was in charge of creating a marinade for some Greek chicken we were going to eat and it turned out so amazing that I've been thinking of it since. I recommend at least an hour or two to let the chicken marinade so that it can really soak up a ton of delicious flavor. For this Greek chicken marinade, I added fresh lemon juice, olive oil, garlic powder, onion powder, Italian blend spices and black pepper. That's it! It comes together in just a minute or two and is loaded with so much flavor.

Chicken Gyros

I grilled up the Greek marinated chicken, made some tzatziki and then chopped up the veggies for these chicken gyros. I added thinly sliced red onion, tomato and cucumber along with a sprinkle of feta cheese. Oh man, these are SO good! I found some whole-wheat pita wraps to use for these that worked well. I think I have a new favorite summer grilling recipe! These are so, so good that I ate one at 10 AM when I shot these photos!

You just use your hands to warm and shape the wraps which will create a breathable seal to preserve your food. To reuse them, wash in cool water with mild soap and air dry. INGREDIENTS

  • Greek Marinated Chicken
  • 1 1/2 pounds boneless, skinless chicken breasts, thinly sliced
  • Juice from 1 lemon
  • 2 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 tablespoon Italian seasoning
  • 1 teaspoon black pepper
  • Tzatziki Sauce
  • 1/2 large cucumber, unpeeled
  • 1 1/4 cups nonfat Greek yogurt
  • 3 large garlic cloves, grated
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon salt
  • 1 tablespoon dried dill (or fresh)
  • Gyros
  • 4 large whole-wheat pita wraps
  • 1 large tomato, thinly sliced
  • 1/2 large cucumber, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1/2 cup feta cheese

INSTRUCTIONS

  1. Thinly slice chicken breasts and toss together all ingredients for marinade. Marinate chicken for at least 1 hour and up to overnight.
  2. For tzatziki, grate cucumber and garlic and then finely chop up grated cucumber. Squeeze cucumber with a couple of paper towels so tzatziki isn't watery.
  3. Mix together yogurt, garlic, oil, vinegar and salt. Mix in cucumber and dill and stir well.
  4. Once chicken is marinated, turn grill on high and grill chicken for about 5 minutes on each side until chicken is cooked through. Remove from grill and slice.
  5. Take wraps and fill with chicken, tomato, cucumber, red onion, feta and tzatziki sauce.
