My list of grilling recipes that I want to make this summer is a mile long and I am soaking up all things summer as I know that it always goes by so fast. Each year, we try to grill shrimp a couple of times and I created this delicious honey lime vinaigrette marinade for shrimp and vegetables to cook on the grill. Grilled Honey Lime Shrimp and Vegetables are easy to make and family friendly. My kids, husband and I all really enjoyed it!

I love shrimp because they cook really quickly, are a great source of protein and are very lean. We don't eat them all the time due to being a little more expensive than other sources of protein which makes them a treat every time we get to enjoy them. Adalyn especially is my big shrimp lover. For this recipe, I used these different vegetables but feel free to throw in any veggies that would cook well on the grill. I also used fresh pineapple for sweetness and knowing that it would be awesome with the marinade. The sky is the limit! I think that pea pods, broccoli or green beans would be yummy in this recipe too.

Marinating Honey Lime Shrimp

I marinated these honey lime shrimp and vegetables the night before I wanted to cook them. You can also do that or marinate for at least an hour before so that the shrimp and vegetables can really soak up all of the delicious marinade. I created a little vinaigrette with fresh lime juice, honey, olive oil (or any oil you like), garlic and onion powder. It was super delicious on these shrimp and vegetables. Make sure you don't skip the fresh pineapple. That was my favorite part of this dish! Something about grilling the pineapple with the marinade is the absolute best.

Grilled Honey Lime Shrimp and Vegetables

Prep Time:  5 minutes Cook time: 10 minutes Total time: 15 minutes

INGREDIENTS

  • 1 pound shrimp, peeled 
  • 1/3 cup lime juice
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup pineapple, cut into 1 inch pieces
  • 2 cobs of corn, cut into 1 inch pieces
  • 2 bell peppers, cut into 1 inch pieces
  • 1/2 cup red onion, cut into 1 inch pieces
  • Additional lime slices

INSTRUCTIONS

  1. In a dish or zipped bag, toss together all ingredients. Let marinate for at least 1 hour or up to overnight.
  2. Preheat grill and add all shrimp, pineapple and vegetables to grill pan or grill sheet. Do not add all liquid to grill.
  3. Cook for 5 minutes, stir vegetables and shrimp and cook on the other side until shrimp are cooked through and vegetables are soft, about another 5 minutes.
  4. Serve in a bowl over rice or on its own with lime wedges if desired.
