Bruschetta Hummus Toast

We still have tomatoes from the garden and I couldn't be more excited about it! It took forever for them to be ready to eat thanks to a cold start to summer and now, our plants are producing more than we know what to do with. My go-to recipe this year to eat a bunch of tomatoes is bruschetta! To make it a heartier side dish or appetizer, I added a spread of hummus which adds protein and makes it perfectly creamy. These Italian Bruschetta Hummus Toasts are easy to make and full of flavor.

Bruschetta is delicious on chicken, on crispy garlic toasts, on top of a salad or even enjoyed plain as it's own salad. I know that there are quite a few ways to make bruschetta and for mine, I use a mix of the best tomatoes I can find (or grow in this case), fresh basil, shredded Parmesan cheese and tons of garlic. You could also add mozzarella cheese, red onions or a drizzle of balsamic glaze. It's up to you!

I've been a long time fan of Sabra hummus. We are lucky because it is located at most grocery stores that we shop at. I like lots of the flavors but my very favorite is the pine nut hummus. It is delicious! In this recipe, the hummus helps the bruschetta stay on the toast and the dish a boost of creaminess and protein.

Italian Bruschetta Hummus Toasts

Italian Bruschetta Hummus Toasts feature crispy garlic toasts topped with creamy hummus and bruschetta made with ripe tomatoes, fresh basil and garlic and Parmesan cheese!
Prep Time:  10 minutes Cook time: 10 minutes Total time: 20 mins

INGREDIENTS

  • 1 loaf French bread cut into ~3/4 inch slices
  • 2-3 tablespoons butter
  • 2 teaspoons garlic powder
  • 1-10 ounce container Sabra garlic hummus

  • Bruschetta
  • 3 cups diced fresh tomatoes
  • 3 cloves garlic, minced
  • 6 basil leaves, chopped
  • 1 tablespoon olive oil
  • 2 teaspoons red wine vinegar
  • 1/4 cup shredded Parmesan cheese
  • 1/4 teaspoon salt
  • 1 teaspoon black pepper

INSTRUCTIONS

  1. Preheat oven to 350 degrees. On a baking sheet, place slices of bread. Melt butter and brush onto slices of bread. Sprinkle with garlic powder.
  2. Toast bread in oven for 10 minutes or until breads are toasted until slightly golden brown.
  3. Meanwhile, mix together all ingredients for bruschetta. Note: This can be done ahead of time if being made for a party and sits well in the fridge for about 1 day.
  4. Once toasts are crispy. Remove from oven and spread each toast with about 2 teaspoons of hummus. Top hummus toasts with bruschetta mixture and serve immediately.
