Looking for an easy side dish that the whole family will love? Look no further than these delicious roasted Garlic Parmesan Smashed Potatoes. My mom actually started making these a few years ago and I am totally addicted. They are beyond easy to make and are a wonderful side dish for many different meals.

Garlic Parmesan Smashed Potatoes pair really well with grilled or roasted chicken, roasted vegetables, pulled pork sandwiches and more. When I have the oven going for these smashed potatoes, I usually throw in a pan of veggies to roast as well for another side dish to our meal.

My kids absolutely love these Garlic Parmesan Smashed Potatoes too. My daughter will eat as many as I'll let her for a meal. She came home from school one day right after I had made these and she had a bunch for an afternoon snack! In my opinion, they do not need any extra sauces or condiments with them because they have tons of flavor from the garlic, the Parmesan cheese and black pepper.

Garlic Parmesan Smashed Potatoes

Garlic Parmesan Smashed Potatoes make the perfect easy side dish that the whole family will love! They're buttery, creamy and full of flavor.
Prep Time:  5 minutes Cook time: 25-30 minutes Total time: 30-35 mins

INGREDIENTS

  • 16 baby red skinned potatoes
  • 2 tablespoons ghee or butter
  • 1 tablespoon garlic powder
  • Black pepper to taste
  • 3 tablespoons Parmesan cheese

INSTRUCTIONS

  1. Preheat oven to 425 degrees. With a fork, poke holes in the potatoes and cook potatoes in microwave until soft.
  2. With a large knife on it's side or bottom of a cup, firmly smash potatoes until they are about 1/2 inch thick.
  3. Melt ghee/butter in the microwave and pour over potatoes on a baking sheet. Make sure potatoes are coated in ghee. Sprinkle with garlic powder and black pepper.
  4. Roast for 15 minutes until potatoes are crispy and browned. Remove from oven and sprinkle with Parmesan cheese. Return to oven for 5 minutes to melt cheese.
