Stuffed Pepper Soup

Stuffed Pepper Soup is a healthy, hearty and comforting meal made with brown rice, tomatoes, peppers and ground beef. Like your favorite stuffed pepper meal but in soup form!

When the weather is freezing, there is nothing like a hot bowl of soup to warm you up. There are so many types of soup to make that you could make a different kind of soup each week all winter long and never run out of options. Stuffed Pepper Soup is a delicious option that is easy to make. I love curling up with a hot bowl of this soup for lunch during the work week or having a bowl with some crusty bread with my family for dinner.

Bell peppers are loaded with vitamins which is awesome to boost your immune system, especially as we all are trying to avoid being sick this winter and spring. One bell pepper has 169% of your daily vitamin C. No need to take a vitamin C supplement with these nutrient packed veggies! They are also rich in vitamin K, vitamin B6, potassium and vitamin A. This recipe uses orange, red and yellow bell peppers but feel free to use whatever colors you prefer.

This stuffed pepper soup uses whole-grain brown rice for fiber but feel free to swap it for any whole-grain such as quinoa or wheatberries. Lean ground beef is the meat used in this soup but feel free to swap it for ground turkey if you prefer.

This soup also freezes beautifully. I like freezing it in quart-sized bags and then defrosting it for a quick meal for my family when we are short on time or do not feel like cooking.

Stuffed Pepper Soup

Stuffed Pepper Soup is a healthy, hearty and comforting meal made with brown rice, tomatoes, peppers and ground beef. Like your favorite stuffed pepper meal but in soup form!

Prep time: 10 MINS Cook time: 35 MINS Total time: 45 mins

INGREDIENTS

  • 1 pound lean ground beef
  • 1 onion, diced
  • 3 diced bell peppers
  • 32 ounces low-sodium beef broth
  • Optional: 3 scoops Vital Proteins Beef Bone Broth Collagen
  • 1-14.5 ounce can diced tomatoes
  • 2-14.5 ounce cans tomato sauce
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 2 teaspoons dried basil
  • 1 teaspoon black pepper
  • 2 teaspoons Italian spice blend
  • 1 cup uncooked brown rice

INSTRUCTIONS

  1. Cook ground beef in a large until cooked through and lightly browned. Remove from pot.
  2. Add in onions and bell peppers and sauté for about 5 minutes.
  3. Add in diced tomatoes, tomato sauce, broth, collagen and spices. Cook for about 30 minutes on low heat.
  4. Meanwhile, cook rice according to directions. When soup is finished, add in cooked rice.
