Reuben Sushi Roll

Reuben Sushi Roll is a different take on sushi that is simple to make with 5-ingredients and super delicious with pastrami, Swiss cheese, sauerkraut, sushi rice and Thousand Island dressing for an appetizer that you don't even have to cook!

Do you love sushi? I love the idea of sushi but have never actually liked eating sushi. Until now! I recently learned about the Beefshi trend which uses the sushi concept but instead of using fish, it uses beef. I am all about eating anything with Reuben ingredients and these Reuben Sushi Rolls are so delicious. Finally, a sushi that I can enjoy!

Reuben Sushi Rolls Ingredients

-Pastrami
-Sushi rice- you can buy sushi rice or make your own very simply
-Swiss cheese
-Sauerkraut
-Thousand Island dressing

These Reuben Sushi Rolls only use 5 ingredients making it quite simple to make. These would make an awesome appetizer or even a dinner paired with some veggies. You know me, gotta get those veggies in! My kids love reubens so much so they went crazy for these reuben sushi rolls. I love that you can really taste the ingredients in these because they are not sandwiched between a bunch of bread. You can feel free to swap deli corned beef for the pastrami if you want. Either works!

I was a little bit worried about rolling these and how they would turn out but it was actually easier than I imagined. Still quite a bit of steps but not too bad! Anytime I see anything reuben on a menu, I almost always ordered it. Of course there is the typical reuben sandwich but I have also had reuben tacos and those are delicious as well.

I love hosting appetizer parties and attending appetizer parties and these would be so impressive to serve at one! Once, I hosted an appetizer party and someone brought homemade sushi and we were all impressed.

How to make your own sushi rice

I could not find sushi rice in-store and could also not find short-grain rice or medium-grain rice. I could only find long grain white rice. So I looked up how to make your own sushi rice and it was actually very easy and turned out perfectly. You want your rice mixture to be very sticky and the addition of the vinegar and sugar makes it perfectly sticky. Feel free to use sushi rice if you can find it. Otherwise, this is easy enough.

What is Beefshi?

This Beefshi recipe uses pastrami but Beefshi can also feature roast beef, summer sausage, hot dogs, corned beef or bologna. It also includes rice and vegetables. It was created by a culinary institute of America- trained chef. Americans seem to love both beef and sushi so they decided to put them together. Sushi does not mean raw seafood. It actually means vinegared rice that is paired with ingredients like fish, veggies or meat.

These would be great for those who do not like traditional sushi or for those who love sushi and want to branch out and try different kinds. Beefshi is fun and different way to eat deli meat in a different way than on a sandwich.

Some people are against processed meat but I like using it on occasion in my cooking. Especially with a good quality hot dog in the summer or corned beef. Reuben Sushi Roll

Reuben Sushi Roll is a different take on sushi that is simple to make with 5-ingredients and super delicious with pastrami, Swiss cheese, sauerkraut, sushi rice and Thousand Island dressing for an appetizer that you don't even have to cook!

INGREDIENTS

  • Rolls
  • 12 thin slices pastrami
  • 3 cups cooked sushi rice (or see instructions to make your own)
  • 4 thin sliced Swiss cheese, cut into slivers
  • 1 1/4 cups sauerkraut, drained and squeezed dry
  • Thousand Island dressing

INSTRUCTIONS

  1. Cook sushi rice according to directions or make your own: heat 4 cups of water until boiling. Add in 1 1/2 cups white rice. Cook for 15 minutes or until all liquid is absorbed. Meanwhile, heat together 3 tablespoons rice vinegar and 2 tablespoons sugar and mix together until sugar is dissolved. Remove from heat and once rice is cooked, mix together with rice to make sticky rice. Let cool.
  2. Cover a flexible cutting board or sushi mat with plastic wrap and lay 6 slices of pastrami on the mat lengthwise. Spread half of the rice across the pastrami.  Flip over the pastrami/rice mixture so that the pastrami is face up by flipping over the plastic wrap.
  3. Cover the pastrami with half the cheese and half the sauerkraut in a line in the center (like you would put the ingredients in a burrito).
  4. Securing the meat and cheese with your fingers, use your thumbs to push the end of the mat up and over the filling and roll up. Gently squeeze to shape the roll in a circle. Press the ends carefully to secure loose rice. 
  5. Make the second roll the same way. If you have time, it helps to let the roll cool completely in the fridge to help it stay together. Just keep it wrapped in the plastic wrap to stay moist.
  6. Cut each roll into 8 slices. Top with Thousand Island dressing.
