My favorite recipe in the cookbook is this Orange Chicken with Broccoli. I had never made orange chicken before developing this recipe and fell so in love with it. 


We have made orange chicken many times since I finished my cookbook recipes. You can make it with broccoli as is or with a bag of frozen stir-fry vegetables. I love making it with stir-fry vegetables too to have a variety. The fresh orange juice makes a delicious sauce on the orange chicken. The honey sweetens it, the soy sauce and garlic provide a lot of flavor and the cornstarch thickens the sauce so it sticks nicely to the chicken and broccoli.


Healthy Orange Chicken with Broccoli
Serve over a bed of brown rice for a complete meal. Cauliflower rice would work as well! This healthier take on takeout orange chicken is so good that you will not miss the breading on the traditional recipe. It feels like takeout at home. I love making healthier takes on Asian food at home because my family loves it and it is simple to make. I hope you love it.

Orange Chicken with Broccoli
Yield: serves 6 

Orange Chicken with Broccoli

Move over takeout! This orange chicken with broccoli is a healthier take on takeout ready in 20 minutes. Loaded with flavor from orange juice and zest, garlic and ginger! 

Prep Time: 10 minutes Cook time: 10 minutes Total time: 20 minutes

INGREDIENTS

  • Orange sauce
  • ½ cup orange juice (about 1 ½ oranges worth)
  • Zest of 1 orange
  • ¼ cup honey
  • 1/4 cup low-sodium soy sauce
  • ¼ cup rice vinegar 
  • 2 teaspoons chopped garlic
  • 3 tablespoons cornstarch
  • 1 1/2 teaspoons grated fresh ginger
  • 1 tablespoon olive oil
  • 1 ½ pounds boneless, skinless chicken breast, cut into 1 inch cubes
  • 1 (16 ounce) bag frozen broccoli

INSTRUCTIONS

  1. In a large bowl, combine the orange juice, orange zest, honey, soy sauce, rice vinegar, garlic, cornstarch and ginger. Whisk together until combined to form the orange sauce.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the cubed chicken and cook for about 5 minutes until the chicken is cooked through and lightly browned.
  3. Add in the bag of frozen broccoli to the skillet with the chicken and cook for about 2 minutes until vegetables defrost.
  4. Stir in the orange sauce and let it thicken for 1-2 minutes. Serve over brown rice. 
  5. Stores really well in the fridge for up to 4 days and reheats well in the microwave.
