Healthy Chicken Fried Rice

Healthy Chicken Fried Rice comes together in about 20 minutes and tastes like takeout with brown rice, peas and carrots and chicken with soy sauce, garlic and ginger!

We can't get enough of Asian-inspired dishes like this Healthy Chicken Fried Rice! My kids are huge fans of rice and my husband and I love the combination of ginger, garlic and soy sauce so this dish is a win for everyone.

Healthy Chicken Fried Rice is SO easy to make! My #1 hack is to have cooked brown rice ready to go. I make it in huge batches and then freeze it in ziploc bags so I can defrost it in the microwave in 3 minutes and have it ready to go. That saves so much time when cooking the rice. Of course, you can also buy pre-cooked brown rice or quick cook brown rice as well.

You can add whatever vegetables you want to fried rice. I like using frozen carrots, peas and green onions. When we make this at home, I also add in zucchini, white onion, broccoli, peapods, or any veggies that would taste delicious in a stir-fry.

This healthy chicken fried rice reheats very well and makes a wonderful lunch. If you do not eat chicken, feel free to use tofu. If you use tofu, I recommend baking it in the oven until crispy which is our favorite way to enjoy tofu.

Healthy Chicken Fried Rice

Healthy Chicken Fried Rice comes together in about 20 minutes and tastes like takeout with brown rice, peas and carrots and chicken with soy sauce, garlic and ginger! 

Prep Time: 5 minutes Cook time: 15 minutes Total time: 20 minutes

INGREDIENTS

  • 2 tablespoons olive oil, divided
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup frozen diced carrots
  • 1 cup frozen peas
  • 2 teaspoons grated fresh ginger
  • 2 cloves minced garlic
  • 2 eggs, beaten
  • 3 cups cooked brown rice
  • 3 tablespoons low-sodium soy sauce
  • 2 teaspoons toasted sesame oil
  • 2 green onions, chopped

INSTRUCTIONS

  1. Heat 1 tablespoon of olive oil in a large skillet on medium-high heat.
  2. Add chicken to the pan and cook for 4-5 minutes until chicken is cooked through and browned. Remove chicken from pan and set aside.
  3. Add the rest of the olive oil to the pan and add in peas and carrots. Sauté for 2 minutes. 
  4. Pour the eggs into the pan. Cook eggs until they are fully cooked through breaking them up into tiny pieces, about 3 minutes.
  5. Add in ginger and garlic and cook for 1 minute.
  6. Add in brown rice, chicken, soy sauce and green onions and mix well. Cook for 2 minutes until everything is heated through.
  7. Store in the fridge for up to 5 days.
