Do you love having a snack in the evening? I do! We put the kids to bed and Troy and I have our date time. We usually watch a good show and have a snack. Troy loves savory snacks and I tend to go for the sweet snacks. These Healthy Cookie Dough bites are a favorite. They taste very similar to cookie dough but are made with 4 nutritious ingredients plus chocolate chips of course!

Healthier Cookie Dough Bites

Healthy Cookie Dough Bites are a delicious snack to have on hand. They are made with only chickpeas, cashew butter, honey and vanilla extract. Don't skip the vanilla extract because it really gives it that cookie dough flavor. If you don't want to buy cashew butter, peanut butter will work but it will have more of a peanut butter cookie dough flavor instead of regular cookie dough. Both are great.


Cookie Dough Balls

While I was writing this post, I had the random idea to see how they would taste heated up. I flattened one of these balls on a plate and microwaved it for 30 seconds and it was delicious that way too. The chocolate chips get melty and to be honest, I think I prefer these hot now!

For a dessert to naturally be loaded with protein and fiber like these cookie dough bites are is pretty awesome! Chickpeas have protein and fiber and the cashew butter is rich in healthy fats and some fiber and protein. I love having a snack that tastes indulgent but is actually pretty good for you!

I am known to have issues sleeping and find that a semi-filling snack helps me fall asleep easier. Nothing too heavy, greasy or sugary and these healthy cookie dough bites are perfect. On nights when I am feeling anxious or know that I will have trouble sleeping- like the night before we leave for a vacation or something else big, I take a melatonin supplement along with eating a semi-hearty snack.


I like the Terry Naturally EP120 10 mg Melatonin. I usually only need half though so I cut it in half for a 5 mg dose. Melatonin helps me fall asleep so much easier. I like throwing these in my bag for a trip we are taking to help me fall asleep quicker since I have trouble sleeping in hotels.

Yield: 18 cookie dough bites 

Healthy Cookie Dough Bites

Healthy Cookie Dough Bites taste like cookie dough but are made healthy with chickpeas, cashew butter, honey, vanilla and of course, chocolate chips! Ready in 10 minutes and are great cold or hot.


Prep Time: 10 minutes Cook time: 0 minutes Total time: 10 minutes

INGREDIENTS

  • 1-14.5 ounce can low-sodium chickpeas, drained and rinsed
  • 1/2 cup cashew butter
  • 3 tablespoons honey
  • 2 teaspoons vanilla extract
  • 1/4 cup chocolate chips

INSTRUCTIONS

1. In a food processor, blend together the chickpeas, cashew butter, honey and vanilla until very smooth. Scrape down the sides of the food processor to make sure everything is blended.
2. Mix in the chocolate chips. 
3. Take about a tablespoon of dough on a spoon and roll it into a ball. If you're having trouble rolling it, refrigerate the dough until firmer and try again. Continue until all of the dough is rolled into balls- this recipe makes about 18 cookie dough bites.
