The second the kids come in the door from school, they are ready for a snack! They come home super hungry and could eat about 5 snacks if I let them. That's where these no-bake chocolate peanut butter bars come in. They are kid-friendly and loaded with protein, fiber, healthy fats and whole-grains to help fill my kids up after school. I love sitting down at the kitchen table with them to enjoy one of these bars together while helping them with their homework. They are so delicious and Troy says they taste just like an Ohio Buckeye dessert.

Chocolate Peanut Bars

No-Bake Chocolate Peanut Butter Bars Ingredients

  • Peanut butter
  • Oat flour (just oats ground up- you can also keep them whole if you prefer but I like the texture of the bars better when it is ground up)
  • Maple syrup or honey
  • Peanuts
  • Dark chocolate
  • Coconut oil

These Chocolate Peanut Butter Bars are so delicious but actually quite nutritious. They are loaded with peanuts and peanut butter which is one of my favorite ways to get protein and healthy fats into my kids during snack times. It is always a work-in-progress trying to fill my kids bellies because no matter how much they eat, they are always telling me that they're hungry, especially near bedtime. I am teaching them to choose snacks with protein and/or healthy fats to help fill them up.

My kids are quite active with Oliver being in soccer, Adalyn being in volleyball and all of the kids doing swimming and a kid's gym class. These bars are the perfect snack for hungry bellies. They taste like dessert but the ingredients are awesome. I love knowing that they are refueling after exercise and loving their snack.

These Chocolate Peanut Butter Bars are also perfect for anyone. I love them for a snack while I work or to enjoy in the evening while I watch a show. I wanted to make bars that taste like candy but that are healthy. They are chewy but with the perfect amount of crunch from the peanuts. They are super filling so even a small piece will fill you up. I had one right after I made them and was full for awhile thanks to the protein, healthy fat and fiber combo!

No-Bake Chocolate Peanut Butter Bars

Why eat peanuts and peanut butter?

I love peanuts and peanut butter because they taste amazing for one but also because they are loaded with nutrients. They are a great plant-based protein that fits in with any meal or snack in the day. Peanuts can help with energy and help keep you full longer. Peanuts and peanut butter have protein, fiber, vitamins and minerals. Thanks to the protein and healthy fat in peanuts and peanut butter, they are considered an energy-dense food which the body uses for long-lasting fuel.

A recent study from the University of Barcelona found that daily peanut or PB consumption was associated with improved memory, reduction in stress, anxiety and depression. Peanuts have a low glycemic index meaning that they won't spike your blood sugar the way that some other snacks may.

Yield: 12 large bars, 15 medium bars 

Chocolate Peanut Butter Bars

Chocolate Peanut Butter Bars are no-bake, taste like dessert but are loaded with protein and fiber! Chewy, rich bars with crunchy peanuts.

Prep Time: 20 MINS  Cook Time: 0 MINS  Total Time: 20 mins

INGREDIENTS

INSTRUCTIONS

  1. Take a 9 x 9 baking dish (or any medium sized square or rectangle dish) and cover it with parchment paper.
  2. In a large bowl, mix together the peanut butter, oat flour and syrup or honey. You may need to use your hands to mix at the end as the mixture gets thick like cookie dough.
  3. Press the dough evenly on the bottom of the baking dish and flatten with a spatula. Place the pan in the freezer.
  4. In a microwave-safe bowl, add the chocolate, peanut butter and coconut oil and heat until the chocolate is melted. Stir every 30 seconds.
  5. Pour the chocolate mixture over the peanut butter bars and top with peanuts. Freeze for 10-15 minutes until bars are firm. 
  6. Cut into pieces. Stores well in the fridge for up to a week. You can also store in the freezer for up to 6 months.
