I'm super excited to share these Honey Lime Jalapeno Grilled Chicken Bowls with you using my Great Aunt's honey lime jalapeno dressing recipe! It was a favorite growing up and I knew that it would make the perfect marinade for my chicken and would be amazing drizzled on these grilled chicken and veggie bowls. Honestly, when my kids tried this meal, their reactions surprised me. They LOVED the dressing so much that they instantly asked for more and asked me to make this meal again and again. I didn't know it would be that much of an instant favorite.


Grill with Honey Lime Jalapeno Chicken and Veggies

This is the perfect easy meal on the grill that tastes amazing and is packed with nutrients. I don't know about you but I refuse to give up on grilling until it's actually snowing here in Michigan. I love food on the grill and these bowls are delicious using Michigan's best produce found at the local farmer's market. These bowls make the most delicious dinner and can also be meal prepped ahead of time and enjoyed for lunch! If you don't have a grill or don't feel like grilling, this meal can also be made in the oven on a sheet pan or in a skillet.

Honey Lime Jalapeno Grilled Chicken Bowls Ingredients

  • Boneless, skinless chicken breasts
  • Bell peppers in a variety of colors
  • Onions
  • Zucchini and summer squash
  • Cherry tomatoes
  • Brown rice
  • Honey Lime Jalapeno Dressing
  • Oil (olive or canola)
  • Lime juice
  • Pickled jalapenos- I am used tamed jalapenos because my kids ate this but feel free to use fresh or regular pickled ones.
  • Cilantro
  • Honey
  • Salt

Michigan fall produce is the best of the best! I am telling you, as a true produce connoisseur, I know where to get the best produce. In the summer and fall especially, the answer is Michigan produce. I love shopping at Eastern Market in Detroit for my produce and load up every time. Right now, we try to go each Saturday and buy a variety of produce. In September, we are still getting a variety of summer produce along with fall produce so it is the best of both worlds. Honey Lime Jalapeno Chicken and Veggie Bowls

Michigan is a major producer of produce and I feel so lucky to live here and to get to experience it. In season produce tends to be the most affordable and taste the best so I encourage you to shop Michigan in-season produce! Of course, fresh fruit and veggies are packed with vitamins, minerals and fiber already.

Lime Jalapeno Grilled Chicken Bowls

Yield: serves 4-6 

Lime Jalapeno Grilled Chicken Bowls

Lime Jalapeno Grilled Chicken Bowls are loaded with grilled chicken, colorful bell peppers, onions, zucchini and tomatoes served over brown rice with a delicious honey lime jalapeno dressing!

Prep Time: 20 minutes Cook time: 10 minutes Total time: 30 mins

INGREDIENTS

  • 1 1/2 pounds boneless, skinless chicken breast cut into 1-inch pieces
  • 1 green bell pepper, cut into 1 inch pieces
  • 1 red bell pepper, cut into 1 inch pieces
  • 1 yellow bell pepper, cut into 1 inch pieces
  • 1 orange bell pepper, cut into 1 inch pieces
  • 1 cup onion, cut into 1 inch pieces
  • 2 cups chopped zucchini and/or summer squash
  • 1 1/2 cups cherry tomatoes
  • Extra cilantro to top
  • 4-6 cups cooked brown rice
Honey Lime Jalapeno Dressing
  • 1/2 cup canola oil or olive oil
  • 1/3 cup lime juice
  • 1/4 cup tamed jalapenos (or regular pickled jalapenos)
  • 3 tablespoons tamed jalapeno juice (the juice from the jalapenos)
  • 1 tablespoon red wine vinegar
  • 1/2 cup cilantro
  • 1/4 cup honey
  • 1/2 teaspoon salt

INSTRUCTIONS

  1. In a blender, blend together all of the ingredients for the honey lime jalapeno dressing until smooth. 
  2. Toss together the chicken, bell peppers, onions and zucchini and summer squash and mix in about half of the marinade. If time allows, let marinate for about 1/2 hour. 
  3. Light your grill up and toss your chicken and veggies on either a grill pan or on a grill mat and grilled on medium-high for about 5 minutes on each side or until the chicken is cooked through and the veggies are softened. Add the tomatoes in after the first 5 minutes.
  4. To serve, add a scoop of brown rice to a bowl and top with the grilled chicken and veggies. Sprinkle on additional cilantro and drizzle with the remaining honey lime jalapeno dressing.
*These bowls are delicious for meal prep so feel free to make a big batch to enjoy through the week.
