How to Make Peanut Butter Frozen Yogurt Cups

These little Peanut Butter Frozen Yogurt Cups are super easy to make! Just mix together your peanut butter and Greek yogurt and add to muffin cups. Choose whole-milk yogurt or 2% for a richer and creamier consistency. I love using silicone muffin liners for this. Then, top with crushed graham crackers and peanuts and your choice of berries. Chocolate drizzle works well too!

Benefits of Peanut Butter and Peanuts

Peanuts and peanut butter make a great source of nutrients for kids and adults. I give my kids peanut products most days because they're a great source of protein, fiber, healthy fats and nutrients. We love having peanuts and peanut butter in our snacks because it actually fills you up unlike a lot of other kid snacks. Favorites in our house include "peanut butter bread", which is just an open-faced peanut butter sandwich on whole-wheat bread. Other family favorites are peanut butter drizzled on yogurt, peanuts in a trail mix and I could go on and on!

A serving of peanuts has 7 grams of protein and 19 vitamins and minerals. Peanut butter especially is an absolute must-have product in my kitchen that I make sure we never run out of. For my ever growing kids, I love that peanuts and peanut butter are energy dense thanks to the protein and healthy fats. I love that they can eat a small portion and still get lots of nutritional benefits. Peanuts and PB also have nutrients that contribute to brain development, including vitamin E, niacin, resveratrol, and the amino acid arginine.

I partnered with The Peanut Institute to share all about why peanuts are a great choice for people of all ages, body types and ethnicities. Peanuts are super versatile, affordable, nutritious and easily accessible, making them a healthy food.

INGREDIENTS

  • 2 cups vanilla Greek yogurt (use whole-milk yogurt or 2% for the best texture)
  • 1/4 cup drippy peanut butter
  • 1/4 cup crushed graham crackers and peanuts
  • 1/2 cup raspberries
  • 1/2 cup blackberries

INSTRUCTIONS

  1. In a medium-sized bowl, mix together the Greek yogurt and peanut butter well. Pour the mixture evenly into muffin liners- silicone muffin liners work best because they're the easiest to remove.

  3. Freeze until mostly solid- about 1 hour. Remove from the muffin liner to enjoy.
*If you like a softer texture, let your Peanut Butter Frozen Yogurt Cup thaw for a few minutes before eating.
**I like freezing mine for about an hour to1 1/2 hours for a softer, not totally solid frozen cup.

Enjoy!
