Grilled Rainbow Fruit and Vegetable Kebabs are a quick and simple side dish that are packed with nutrients and are customizable with any produce you have on hand!
I am obsessed with all things produce right now! Produce is at its best here in Michigan and all of my favorite fruits and vegetables are in season, flavorful and affordable. I love it! Dinner each night pretty much consists of something on the grill or a huge salad loaded with vegetables. This is my favorite time of year for food.
A few months ago, I made a rainbow flatbread pizza that was so pretty that it made me want to make everything rainbow this summer. I was just going to use vegetables on these kebabs but then thought about how incredible grilled fruit tastes so I included some of that too. The strawberries and apricots on these kebabs were my favorite part of the skewer.
I kept them super simple with just some olive oil on them to let the natural flavors of the fruits and vegetables come out. I was thrilled how they came out. Feel free to use whatever fruits and vegetables that you have on hand to make these. If you have cherry tomatoes for the color red, use those. Or asparagus would be great for the color green. Whatever you feel like using, go ahead!
These simple grilled rainbow fruit and vegetable kebabs are the perfect side dish for any summer dinner or party. They look pretty so they would be fun to entertain with. I ate these for a couple days after they were made and they tasted as good as when I made them.
For this recipe, I got all of my ingredients at my favorite store, ALDI. You guys know how obsessed that I am with ALDI! As I type up this post, I am snacking on one of the ALDI unsalted rice cakes topped with their cashew butter. My dad called me up last week saying that he found the cashew butter which is normally $5.99 for only $0.50 each! I had him get 12 for me! I love a great deal on products that taste amazing and are healthy for me. I love the great deals that ALDI always has. Each week, I always look at their produce sales and stock up on whatever is on sale that week.
Grilled Rainbow Fruit and Vegetable Kebabs
Prep Time: 10 minutes
Cook Time: 8 minutes
- 1/2 cup strawberries, halved
- 1/2 red bell pepper, chopped into large pieces
- 1/2 orange bell pepper, chopped into large pieces
- 2 apricots, quartered
- 1/2 yellow bell pepper, chopped into large pieces
- 1/2 zucchini, cut into half moons
- 1/2 green bell pepper, chopped into large pieces
- 1/3 medium eggplant, chopped
- 1/2 red onion, chopped into large pieces
- 2 tablespoons olive oil
1. Thread fruits and vegetables in a rainbow pattern on skewers until all produce is used up.
2. Drizzle in olive oil.
3. Grill for about 3-4 minutes on each side until vegetables are partially soft and have grill marks.
