I have always wanted to make huevos rancheros and when researching what ingredients go in them, I found all kinds of results. I found both refried beans and black beans. I found using sauteed onions and peppers, avocado, fresh tomatoes, green onions and more. I decided to use the ingredients that sounded the best to me and I was very happy with the results. One thing that was always the same time and time again is all of the huevos rancheros recipes used a sunny side up, over medium egg.

I made these one morning right after breakfast to photograph and you know what? Adalyn and I immediately ate them for a second breakfast right when I was done taking pictures. She loved the beans, avocado, feta cheese and tomatoes the best. I liked the mixture of the over medium egg with the beans and all of the flavors together. We devoured these in just a few minutes!

With Cinco De Mayo right around the corner, these would make the perfect breakfast or you could even eat them for dinner. They are filling from the beans, eggs and feta cheese. They are fiber rich from the beans, tomatoes, flatbreads and avocado. Alternatively, you could use flour or corn tortillas for this recipe but the flatbreads hold up really well and do not bend easily and taste great.

10-Minute Huevos Rancheros


Prep Time: 5 minutes
Cook Time: 5 minutes
Servings: 2

Ingredients 

  • 2 Flatout Foldit Flatbreads, cut in half
  • 1 tablespoon olive oil
  • 4 eggs
  • 1 cup low-sodium black beans, drained and rinsed
  • 2 teaspoons lime juice
  • 1/2 teaspoon garlic powder
  • 1/4 cup feta cheese
  • 1/4 cup grape tomatoes, sliced
  • 1 green onion, diced
  • 1/2 avocado, diced
  • Sprinkle of black pepper

Instructions

1. Toast flatbreads in toaster.
2. In a fry pan, heat olive oil and cook eggs sunny side up until yolks are partially cooked (or according to preference).
3. Mix together black beans, lime juice and garlic powder and heat for one minute.
4. Top toasted flatbreads with black bean mixture and an egg. Sprinkle on feta cheese, sliced tomatoes, green onion and avocado. Sprinkle with black pepper.
Enjoy as is or top with your favorite sauce!

This recipe features Flatout Flatbreads which we have been loving for many years. I love every single variety including the light flatbreads, artisan pizza crusts, ProteinUp CarbDown flatbreads and more. I like them sweet and savory and having them for a snack or meal. I chose to use the Flatout Foldit Artisan Flatbreads in 5 Grain Flax flavor and just cut them in half for this recipe and was very happy with the results.
