Chicken satay is a recipe that my mom has been making for many years. I believe that she found her recipe for it in a cookbook and my siblings and I have loved it since the first time that we tried it. This version is a little bit different as the only ingredients in that one are barbeque sauce, peanut butter and chicken- I figured that I needed to make a little more substantial recipe to share than that- though that one is incredible!

My husband and I like any kind of food on skewers. One of his specialties is making kebabs for our family and I love them! They make great leftovers too. Word to the wise, do not plan on having leftovers if you cook pineapple and chicken on the same skewer if the chicken is touching the pineapple. The enzyme in the pineapple will cause the chicken to break down. We have learned this the hard way!

These are awesome paired with an Asian stir-fry or a simple chopped salad with an Asian inspired dressing. You could use peanut butter in the recipe but using peanut butter powder cuts the calories and fat by a lot. It still tastes delicious too!

This chicken turned out so delicious! I could not get enough. Adalyn can be funny about meat sometimes but she begged me to "try it, try it" before dinner. The sauce is so delicious plus with the grilled taste, you won't be able to get enough. I love the crunchy peanuts on it and a sprinkle of fresh lime juice gives it that tart flavor I love.

Chicken Satay with Peanut Sauce

Prep Time: 10 minutes
Cook Time: 8-10 minutes
Servings: 4

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1/2 cup peanut butter powder
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons rice vinegar
  • 1 teaspoon garlic powder
  • 2 tablespoons chopped peanuts
  • 1 lime, cut into wedges

Instructions

1. Cut chicken breasts into strips and thread onto wooden or metal skewers.
2. Whisk together peanut butter powder, soy sauce, rice vinegar and garlic powder. Pour half of sauce over chicken skewers.
3. Grill for about 5 minutes on each side until chicken is cooked through.
4. Remove from grill and sprinkle chicken skewers with sesame seeds and chopped peanuts. Serve with the remaining peanut sauce and lime wedges. Enjoy!

This recipe uses my favorite peanut butter powder: Purely Inspired Powdered Peanut Butter. I have been a fan of powdered peanut butter for years and this one is delicious. It has 90% less fat per serving than peanut butter. I do not typically use it in place of PB but like to add it to different sweet and savory dishes to use in a different way. It can give great flavor to foods. It is only made with roasted peanuts, sugar and salt and has 6 grams of protein per serving. I also like it mixed into yogurt for a peanut butter Greek yogurt, I eat it daily in my oatmeal and it is tasty in smoothies.
