I love baked oatmeal! I usually make it in a pan but today, I decided to make it in muffin cups which are perfect for back to school. This is our last year of having no kids in school but still, mornings are busy around our home. Troy and I both work and getting out the door quickly is hard.

These customizable baked oatmeal cups are perfect for those days that you or your kids need a quick breakfast that is both healthy and delicious. My daughter (age 2 1/2 at the time) was not the biggest fan of oatmeal. When I showed her these, I told her that they were muffins and she loved them. Her favorite part was choosing her own "muffin" to eat.

When baking up a pan of these, you can totally customize the toppings to whatever you and your family like. If your daughter likes blueberries, add some of those to hers. If you son is a fan of apples and cinnamon, make a couple of those. If you love coconut and chocolate chips, toss some of those toppings on your baked oatmeal cups. The base is the same for all of the cups and the toppings vary which is actually a very simple way to make these.

When adding your toppings, some can be added before baking and some should wait until afterwards. The coconut and chocolate chips are perfect sprinkled on before. The apples/cinnamon and the blueberries can be done ahead of time. If you are using strawberries, peanut butter, bananas, etc. wait until the baked oatmeal cups come out of the oven to add your toppings.

Customizable Baked Oatmeal Cups

Prep Time: 10 minutes
Cook Time: 15-20 minutes
Servings: 4

Ingredients

  • 3 cups old fashioned rolled oats
  • 1 1/2 teaspoons baking powder
  • 1 scoop vanilla protein powder
  • 1 teaspoon cinnamon
  • 1 1/3 cups milk
  • 2 eggs, beaten
  • 1/4 cup light syrup
  • Toppings of choice: peanut butter and strawberries, blueberries, chocolate chips and coconut, apples and cinnamon.

Instructions

1. Preheat oven to 375 and line muffin tins with muffin liners.
2. In a bowl, combine all ingredients except for toppings and mix well.
3. Scoop oat mixture into muffin tins and bake for 15 minutes or until oatmeal is cooked through.
4. Top with your choice of toppings. Note: if you use blueberries or apples, you can add those before cooking.
