Jade Asian Greens Pasta Salad

Jade is a company that sells different kinds of Asian greens.  They started in 2008 and grow their vegetables in California. The produce is fresh and nutritious.  Along with the Asian greens, they also grow celery, strawberries, and other vegetables.

For my review, I was sent a variety of their products. I love any kind of greens and was super excited to try some new to me vegetables.  They grow tiny baby bok choy which is awesome! Normally, bok choy is about the size of celery but these ones are about the size of a roma tomato.  They are so cute! I decided to make a pasta salad with them and it turned out pretty good.  Unfortunately, I forgot to take a picture but  I will still share the simple recipe.
Asian Greens Pasta Salad
Ingredients:
1 lb whole grain pasta
3 containers Jade Asian greens (baby bok choy, gai choy, gai lan), chopped
1 cup chopped cauliflower
8 ounces chopped muenster cheese
12 ounces fat free Italian dressing

Directions:
1. Boil a pot of water and add pasta.
2. Meanwhile, cook greens and cauliflower in a fry pan with 1 tablespoon garlic olive oil (or any oil). 
3. Drain pasta and add greens.
4. Add Italian dressing and let chill.
5. When chilled, add chopped muenster cheese.
***You can top this pasta salad with garbanzo beans for some extra protein and to fill you up.

My mom, husband, and I all enjoyed this pasta salad. It makes a good side or main course. The greens were tasty and nutritious. Enjoy!
