Summer is coming! I know it will be here before we know it! My favorite kind of food the fresh foods that are available in the summer. Fresh fruits and vegetables that taste better than any other time of year- sign me up. To get excited for summer, I created this rainbow flatbread pizza with a variety of different vegetables that would be perfect for any summer party (or any time of year).

You can use whichever veggies you like. For example, you can swap the asparagus for spinach, broccoli or zucchini. For purple, you can use eggplant, red cabbage or red onions. For red, you can use red peppers, radishes or tomatoes. For yellow you could use yellow beets, yellow potatoes, yellow squash or yellow bell peppers. Use whatever you like!

My husband and I love pizza (we even ordered carry-out pizza last night). The problem is that it often is high in calories, fat and sodium. This version is much healthier using a whole-grain flatbread instead of a traditional refined-grain crust, no-salt added tomato sauce and a bunch of vegetables. By switching the veggies for your traditional pepperoni or sausage, this meal is actually very nutritious. Plus, the colors look so pretty!

Rainbow Flatbread Pizza

Prep Time: 5 minutes
Cook Time: 13 minutes
Servings: 2

Ingredients

  • 2 Flatout flatbread wraps
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 cup pizza sauce
  • 1/2 cup mozzarella cheese
  • 1/3 cup diced red vegetables (red pepper, tomatoes)
  • 1/3 cup diced orange vegetables (orange bell pepper, carrots)
  • 1/3 cup diced yellow vegetables (yellow pepper, yellow squash, banana peppers)
  • 1/3 cup diced green vegetables (asparagus, broccoli, green pepper)
  • 1/3 cup diced purple vegetables (eggplant, red onion)

Instructions

1. Preheat oven to 375 degrees. Brush olive oil on flatbreads and sprinkle with garlic powder.
2. Bake for 5 minutes until flatbread is partially crispy.
3. Spread sauce onto flatbread and top with cheese. Top with vegetables and lay in a rainbow pattern on top of the cheese.
4. Bake for 8 minutes or until cheese is melted and pizza is hot.

This pizza turned out awesome! I could see myself serving this at a summer gathering. It is so easy to make. I love making grilled pizza and would try it on the grill if I did not want to heat my house up.

For this pizza, I used my favorite Flatout flatbread for the crust of the pizza which I liked for a thin-crusted pizza. My husband prefers thin crust and loved that he could taste all of the toppings more instead of just the bread. I love that Flatout flatbreads are 100% whole-grain so I can feel good about eating them. I love this brand because they taste great, are full of nutrients and they are made in Michigan.
